These are definitely better after they've sat in the refrigerator over night. I thought they were ok when they were fresh, but the next day, they were amazingly good. Not a lot of work for a big payoff -- I would definitely recommend these!

Strawberry Cheesecake French Toast

This was really good, and not hard to make. I think the time estimate is pretty accurate. The cream cheese filling was grainy from the sugar, not smooth and creamy like I had expected, but it was still good. Definitely take the serving size seriously here! It is very rich and sweet, and I cannot imagine eating more than 1/8 of this recipe (one half sandwich).

Whit's Chicken Enchiladas

I thought this recipe was delicious, but it didn't taste especially enchilada-y to me even with the addition of enchilada sauce, more like a cream cheese and chicken wrap. However, I would definitely make it again. It reheats well and is great to bring to lunch.

Florida Strawberry Muffins

These were good, but not as flavorful as I would have liked. That may have just been because the strawberries themselves were too bland. My roommate liked them, though. EDIT: The more I ate these, the more I liked them, and they were a success with all of my friends. The flavor is subtle, but pleasant.

Red Lentil Curry

This was really tasty, and not hard to make. I had never cooked lentils before, and they ended up a little crunchy, but that was definitely my fault, not the recipe's. The lentils at the bottom of the pot were very soft, while the lentils at the top did not absorb much of the water.

Curried Coconut Chicken

Very tasty, and easy to make. I enjoyed the leftovers for lunch all week. It was uncomfortably spicy for me (perhaps because I used curry paste instead of curry powder), so I mixed in some plain yogurt - perfect! Frozen peas are a great mix-in, too!

Make Ahead Lunch Wraps

I love these wraps! I originally made them as a quick dinner for when I come home from work hungry at 10pm, but I like them so much that I often eat them even on my days off. I have made these twice so far. The first time I substituted salsa for the tomatoes and chiles and Monterey Jack cheese for Pepper-Jack. The second time, I made no substitutions, although I did add some spices (I particularly like the flavor that garlic powder adds). They were so much better the second time! The Pepper-Jack really makes this recipe; don't leave it out!
