Chicken with Mushrooms, Prosciutto, and Cream Sauce

I thought this was really tasty and easy! I made a few changes based on what I had in the house. I used bacon instead of prosciutto, used chicken breasts instead of thighs, and used chicken stock instead of wine. The result was perfectly tasty. I'm definitely adding this to my menu rotations. Thank you!

Balsamic Roasted Pork Loin

If it weren't rude to write in all caps, I would do it. I love this recipe!!! It is freaking amazing. I almost always make my pork loins like this now. The only thing I've ever changed is added a tremendous amount of minced garlic. I love that I always have these ingredients on hand and that it yields such an economical and incredibly delicious dish. Thank you for sharing this!

Buttermilk Mango-Berry Crumb Cake

I gave this recipe five hearty stars. I LOVED it. I had a few small changes just based on what I had in the house. I didn't use any berries because I didn't have any, but I'll bet they would have been awesome in the cake. I also used pumpkin pie spice in place of the nutmeg because that's what I had. I wanted to say thanks for adding the note to cream the butter and sugar until it was noticeably lighter. I've been baking for a long time and have never read that, and I think it made a huge difference in making a very fluffy cake. This recipe in fact made a very, very light, fluffy cake. Thank you!

Spanish Rice Bake

This was pretty easy and tasty. I also used salsa in place of chile sauce because I didn't know what chile sauce was. I used brown rice and didn't use much cheese for the topping. I realized as I was cooking that this is almost the same recipe as my stuffing for stuffed green peppers. I wasn't super wowed by this recipe but it was pretty good for an easy meal.

Potato-Topped Chili Loaf

I'd rate this 3.5 stars if I could. With some seasoning of the potatoes and meat, the flavor was better. But overall, this was just an okay recipe for me. Decent to make once, but I won't be adding it to my recipe book. I'll just stick with shepherd's pie, as this is a similar take.

Slow-Cooked Steak Fajitas

I think this was a really great starting point with tons of flexibility. I added a cup and a half of beef stock because it smelled/looked too tomato-y for my taste. The flavor was otherwise great and very versatile! Even my in-laws liked it.

Butter Roast Chicken

I stuck with the recipe as-is -- for the most part. I used another reviewer's suggestion and put 2 cups of chicken stock in the bottom of the pan with a bunch of cut-up potatoes and onions. The butter mixture was used for the bird itself as written. I really loved the flavor of the recipe, but honestly, I think it would have been really greasy and gross had I not put in the chicken stock to dilute the butter. It was just WAY too buttery for my taste.

Feta Cheese Turkey Burgers

Wow! I was really surprised at how just a few ingredients made a plain ole burger into something really memorable. I changed the recipe just a little bit. I used regular ground beef (YUM) and added a few dashes of garlic powder. The last little change was something inspired by my husband's Greek grandmother's meatballs: Using the fine side of the grater, I grated a little bit of onion/onion juice into the meat. Not much -- just a little to perk it up. Super delicious! Thanks for sharing the recipe.

Creamy Lemon Chicken Soup

I did some tweaks, but this was a great, easy recipe. I wanted to make it more like the avgolemono soups I've tried. Here's what I did: 1) Reduced total cups of water to 9 instead of 10; 2) added an extra cube of boullion b/c I didn't have granules; 3) shredded the chicken instead of cubing it; 4) omitted the carrots; 5) upped lemon juice to 1/2 cup; 6) added about 1/4 tsp. lemon pepper; 7) added another cup of rice. It was too liquidy for me with just the single cup. Delicious!

Maria's Portuguese Bacalau

I'm so glad I tried this recipe. By far, one of the best I've found on allrecipes.com. I had to make a few changes based on what I had in the house. I used fresh cod and boiled it in heavily salted water, and added some salt to the parsley/olive oil mixture. I also used red potatoes since that's what I had on hand. I followed the rest of the recipe as-is. The flavors were absolutely outstanding. I love that it's so healthy, too. I *never* go back for seconds on dinner, but I did with this one. My husband said he could survive on this dish alone. It's honestly so good, I almost felt guilty taking credit for it! Thanks for contributing this one.

Ann's Dirty Rice

This is a good base recipe, easy to work with and make the way you want. I added a can of red beans, some garlic powder, Adobo seasoning and a couple of dashes of cayenne. I also used brown rice instead of white. Very easy and inexpensive! Thanks for sharing.

Banana Crumb Muffins

I first tried this recipe incorporating a lot of the suggestions from previous reviews (replacing oil w/ apple sauce, adding nutmeg and cinnamon, using brown sugar instead of white, adding vanilla). BIG MISTAKE. The end result ended up tasting like a spice cake instead of a banana bread. The nutmeg and cinnamon were way too overpowering for me and I could barely appreciate the incredible, overripe bananas I'd used. I tried it again with the recipe as is, except I replaced the oil with applesauce again and omitted the cinnamon from the topping. Much better! Wonderful, traditional banana flavor. I made it a quick bread instead of muffins and baked for about 50 minutes.

Spicy Sausage and Rice Casserole

I really liked this recipe -- but, like a previous reviewer said, it's really like a stuffing for stuffed bell peppers. I made quite a few modifications based on others' input. I used just over a pound of mild turkey sausage, 2 chopped chicken breasts and just one red pepper. I upped the chicken broth to 2 cups and used 2 bags of "boil in a bag" whole-grain rice. I used a 28-ounce can of crushed tomatoes and an entire onion. I ended up using about 1/4 tsp. each of cayenne, Ancho chile powder, chili powder, salt and pepper. I also threw in 2 chopped carrots and a can of red kidney beans. Soooo....basically I did a totally different recipe :) But this was a good starting point and obviously very versatile. For one meal, I rolled this into some burritos for dinner, then used more stuffing to make stuffed peppers the next day.

Fabulously Sweet Pear Cake

The batter for this cake was EXTREMELY sweet, so I was worried that it was going to be too much. But the finished product is delicious!! I used 5 VERY ripe pears instead of 4, which allowed me to cut the oil to 1/2 cup and still get a very, very moist cake. I also threw in half a teaspoon of pumpkin pie spice, just to add a little punch. Great cake -- very original.

Golden Potato Soup

This recipe was pretty good! Mine came out a little too salty though, so I'd skip adding extra salt next time -- the bouillon and ham added enough saltiness as it was. Very filling. I doubled it and added carrots, celery and some mashed up broccoli and cauliflower for more veggie variety, since I plan to feed it to my kids.
