Salmon With Fruit Salsa by Jean Carper

I'd give this six stars if I could. It's delicious, from the salsa to the spinach. I made the salsa with the orange marmalade and coconut, and I cooked the salmon at 425 for about 10 to 12 minutes. My husband wrinkled his nose (are those onions with the pineapple?!), but he LOVED it, had seconds, ate the spinach and had the leftovers for lunch the next day. An excellent, easy recipe!

Pears in Chocolate Sauce

This was very good, but I ended up making a different chocolate sauce. I do not care for bittersweet chocolate, so I made it again with semi-sweet, a sliver of butter and a little milk. Much better. I cored the pears before cooking, and they were sweet and tender. I also garnished with fresh strawberries. Easy and tasty!

Pumpkin Peanut Soup

Yum! I served it for friends and they loved it. My 3-year-old even liked it. I didn't have shallots (thought I did), so I threw in an extra clove or two of garlic. It was more like peanut butter soup than pumpkin soup.

Hot Fudge Sauce from EAGLE BRAND®

Very good, but the texture was not quite as smooth as I'd like it to be. Definitely go by instinct rather than strictly by time when cooking it. I drizzled it over Panna Cotta (another allrecipes.com recipe) and topped it all with fresh strawberries. Deliicious!

Panna Cotta

I never had panna cotta before I made it. Easy to make and wonderful! I made Hot Fudge Sauce from Eagle Brand (also posted on Allrecipes.com), drizzled it over the panna cotta and topped it with strawberries.

Quick Spaghetti Sauce

I've never made sauce this way, and this recipe wasn't quite as fast to the table as I was looking for (hungry toddler). With a few changes, I got it to the table within about 15 minutes. I sauted the garlic and onion (I was out of green peppers), then I added a can of Muir Glen crushed tomatoes with basil. I added some parsley and oregano, heated it up, and that was it. It got an "mmmm" from my 22-month-old. I decided to skip the chicken broth and tomato paste because I wanted the fresh taste of the Muir Glen tomatoes to be front and center, and I didn't want to spend an extra 20 minutes making the sauce. This is a good after work recipe.

Chocolate Chip Orange Zucchini Bread

I substituted 1/4 cup of orange juice for 1/4 cup of the oil, and I used orange extract instead of vanilla. The orange flavor was there, but it was still subtle. Next time I make it, I'll mix the chocolate chips with the dry ingredients to see if it prevents them from settling. I might also try adding some coconut. This recipe is a nice change of pace from other zucchini bread recipes.

Cream Cheese Basil Summer Squash

I love recipes that don't require measuring. You can easily tailor this recipe to whatever you have on hand. After the squash cooked for 5 minutes, I drained off the liquid, added some cubed cream cheese (about 3 oz.), fresh basil and shredded extra sharp cheddar. Then I microwaved it for another minute. Next time I will mix the basil with the squash before topping with the cheeses, and I'll add more garlic. Those garlicky bites were especially delicious! I might also try it with tomatoes or only tomatoes.

Blueberry Coffee Cake I

I followed others' suggestions and used 3/4 c. buttermilk instead of 1/2 c. milk and increased the blueberries to 1 1/2 cups. I also sprinkled some of the streusel over the blueberry layer and made it in a springform pan. It was delicious! I took it to a garden club event. Everyone gave it rave reviews, and a customer offered to buy half of it from me.

Caramel Turtle Brownies

I started melting the caramels before I checked to see if I had chocolate cake mix. I didn't, so I substituted yellow cake mix. Yum! Next time I make it with yellow cake, I'll call it Turtle Surprise Bars. I'll add chopped pecans to the caramel/chocolate chip layer to create a hidden turtle layer in the middle. I also used fat-free evaporated milk (but I'm not sure that it lessened the guilt by much...).
