Tater Tot Casserole III
I did not care for this recipe. I wasn't sure what I was thinking putting 1/2 cup Butter into one dish. Save the butter for the top only, 1/2 the amount of it. The top, I will say, is absolutely devine. Needs some meat as well: I think chopped uncured Cherrywood Bacon!

Black Bean and Rice Enchiladas
I am not a big cook, and I really enjoyed these enchiladas! Without the tortillas, it could be an Indian dish (tasted that way to me!) Im saving this to use again and again. Plus, It seems pretty healthy for enchiladas!

Fresh Tomato Salsa
This is my first salsa to make....it is SO good.....BUT ONLY START WITH ONE SERRANO PEPPER, THEN ADD FOR MORE HEAT. I did what one reviewer said and used 1 1/2 serrano pepper, but it was still too hot for me! Once I tame the heat, it will be a 5 star recipe!
