No-Noodle Zucchini Lasagna

No water. No salted zucchini. Add garlic. Otherwise, this was spectacular trick on your tastebuds! My husband admitted he liked it more than the noodled lasagna. Even better, now you can enjoy this healthy twist on a classic dish with a slice (or two) of guilt-free garlic bread on the side :-)

Grilled Chicken and Portobello Lasagna Rollups

I didn't add the mushrooms or pine nuts but it still turned out delicious! Word of advice: COVER and bake for 40 mins (it will keep your noodles from getting tough). Then uncover, add cheese, and finish baking.

To Die For Blueberry Muffins

WARNING: If you use too many blueberries OR they are moist, it will hinder the baking of your batter. The muffins will look golden brown on top, but when you break them open, the insides will not be done.

Chocolate Haystacks

These were so simple to make! (No baking!) Plus, I got rid of some leftover marshmallows and chow mien noodles (who knew this would be a tasty combination!) I made some with white chocolate and a nut-cranberry mix. It turned out well :) For chewier texture, through in the marshmallows with 15 secs left on the melting chocolate. It makes it gooey, but soft.

Strawberry Oatmeal Bars

I took Angele's advice and added more flour and oats. However, I think it made them too dry/crumbly. I do suggest putting the bars in a 9" square pan. These would be REALLY delicious drizzled with some cream cheese icing!

Fluffy Pancakes

These pancakes are definately flu-ffy! They came out 'As thick as a slice of bread', my dad said. The only adjustments I made were to add a teaspoon of vanilla and use canola oil (about 1/4 cup) instead of shortening. I poured a splash more of milk in to thin it out, but these pancakes were perfect slathered with some peanut butter, maple syrup, and washed down with a glass of milk! :)
