Spicy Mango Salsa

Absolutely wonderful. I did not use the basil or ginger root but did put in cilantro. I love the sweet hot taste of the salsa. I diffinately am hooked on mango salsa. Thanks for the recipe. I made extra salsa and froze it.

Day Before Mashed Potatoes

This is one of the best recipes one can use. I've been making this for a number of years. It is so convenient to have on hand. I make half a recipe when we go camping, then just warm it up in the microwave. I too put mine in a pam sprayed crockpot for holidays to free up the oven. Takes longer to heat, but that is OK. Love the recipe!

Chicken Enchilada Casserole II

I've never made Enchilada's before. I found this recipe quite easy to prepare. All our guests went for more than one helping and raved about it. They said it was the best they have ever eaten. I agree. I followed the recipe completely except I only used half a jar of salsa because I used a hot salsa, which made the Enchilada a little spicy but too much. I'll be making this dish quite often.

Frosted Rhubarb Cookies

I have never heard of Rhubarb Cookies before so thought with all the good reviews I'd try them. The only difference I made was add a little vanilla to the recipe. PERFECT! I'd make these again. Very good.

Ultimate Double Chocolate Cookies

WOW! Very good cookie. So easy to make. Every chocolate lover will like these. I like the fact that they stay nice and chewy annd moist, not dried. Will make these again and again. I did use chocolate chips as that is all I had. Turned out amazing.

Potato and Cauliflower Casserole

This is one of the best potato casseroles I've tried. I have not changed anything but this weekend when I make it for another potluck, I will add precooked chicken. Thank you so much. I've made this three times in three weeks for different occassions. I get more compliments on this dish.

Caramel Bars

What a great recipe! I did make a recipe and a half of the oatmeal mixture as I like my crust a little thicker, same with the crumpled topping. The results were wonderful. This is a one of the best caramel bars I have tried. Thanks!

Salmon with Dill

I am not a salmon eater but my husband caught a 55 pound salmon so I just took a big chunk of it, and tried this recipe. I didn't even measure the seasonings but sprinkled them on both sides of the salmon and added as much dabs of margarine that would cover the salmon. Baked it 400 for 20 minutes and turned the oven off until we were ready to eat. This was the best salmon I had ever eaten. It was so moist and flavorful. Thank you for this simple recipe. I will use it often.

Southern Butternut Squash

5 star recipe! Absolutely wonderful! The only thing I didn't know if it was to be served cold as a dessert or hot as a side dish. I baked mine a few hours ahead of time so it was just warm when serve as a side dish. YUM! Every one of the dinner guests made a comment how good it was and asked for the recipe. I was a little leary about the topping that goes on the top but it is a must. The guest loved the topping. I did cut down on the sugar as suggested by other reviewers and I did have to bake mine at least an extra half hour or more. The end results were great. Thanks for the recipe. This recipe goes in my recipe file as a keeper.

Luscious Slush Punch

Another 5 star recipe. I couldn't imagine Jell-o in a punch but with all the good reviews I tried it. Wonderful! Wonderful punch! I got praises galore and had to give out the recipe. I will replace this punch recipe with the one I usually make. Thanks.

Easy Potato Sausage Soup

A diffinate 5 star recipe. I did make a few changes by sauting celery with the onion. I did not have potato flakes so grated a raw potato and put it in with the cubed potatoes. I used Hillshire kielbasa which the taste did not over power the rest of the ingredients. The results were super. Oh, I made a little white sauce using melted margarine, flour and adding a little cream. I needed a little thickener since I had no potato flakes. This recipe is now one of our favorite soups. Thanks.

Rhubarb Cake III

What a wonderful recipe. In just the past two weeks I've made it twice. Everytime people commented on how good it was and asked for the recipe. People could not believe it was rhubarb cake. I did do one thing different. After baking the cake according to the recipe, I made a the following frosting like my mom always did. Combine 6 Tbsp. melted butter, 2/3 cup brown sugar. 1/4 cup cream, 1 cup coconut and 1/2 tsp. vanilla. Spread on cake. Brown lightly under broiler. Thanks for the recipe.

Snowballs II

My recipe for these cookies is very similar but after 40 years of using mine, I am switching to this recipe. These were by far the best I have ever eaten. The buttery taste of real butter is so much better than the margarine I have been using. Thank you so much for this recipe. It's a keeper.

Frosted Banana Bars

Just finished baking these bars and WOW! They are wonderful. So light and moist. I did put mine in a 9x13-inch pan and baked them 30 minutes. They came out perfect. Will be making these a lot. The best by far! Thanks!
