Zucchini Brownies

These are really good. I followed the recipe as written except I added 1/2 cup reeses peanut butter chips to mix instead of nuts. They turned out moist and tasty. The 'batter' is very dry before adding the zucchini, but does come together some after mixing in the zucchini. You have to press it in the pan, but it came out great! Had 4-5 people try them and no one could believe it had zucchini in it.

Baked Asparagus with Balsamic Butter Sauce

This is SOOOOO good!!! The Sauce is just awesome. As per other reviewers suggestions, I browned the butter first, then added 2 Tblsp Balsamic vinegar and 1 tsp. soy sauce, a but of salt and pepper and mixed. We put it on some venison steak I grilled and it was out of this world. You must try this recipe.

Spicy Red Bell Pepper Soup

I halved the recipe and it turned out really good. My husband rated it 5 stars. We sprinkled some garlic croutons in the soup. I added a knorr chicken bullion cube for more flavor, but everything else I followed the recipe. It had a nice spice but didn't blow your taste buds. An easy and tasty healthy meal.

Squash Soup

This is a wonderful recipe. I steamed all the veges instead of boiling. I threw in some carrots and a few green beans as well. I used half processed cheese and half extra sharp cheddar. I think it would be good with bacon crumbles on top. I shared the recipe with a friend of mine and her family and friends loved it.

Grilled Marinated Shrimp

WOW...what great flavor! This is a killer recipe. I had 1 lb of shrimp so I halved the recipe. Used the marinate to baste the shrimp as well as some grape tomatoe and yellow squash kabobs on the grill. The vegies turned out great as well. The shrimp were out of this world. I didn't change the recipe at all, but did a 5 hour marinade, so the zing of the pepper sauce really showed through. I will be making this again.
