Coconut Rice with Black Beans

I make this in the rice cooker and my boyfriend loves it. He asks for it frequently. I always load it with green onions too!

Fig and Olive Tapenade

Be careful not to add too much thyme, it's quite strong; but after marinating for over 12 hours it all blended quite well!

I wanted something to take me back to my month in Spain and this was it. It's even better the second day. Five stars. My only changes: use a red pepper instead of green and adjust the amount you make because I had gazpacho coming out of my ears!

Greek Pasta with Tomatoes and White Beans

Made this for my mom when she was in town and she loved it! Feels good to impress the momma. I too sauteed extra garlic into the sauce and used whole wheat pasta, just for a little more pop. Love the recipe though, it's seriously becoming a staple in my house.
