Shoe Peg Salad
5 Stars for the ease of a refreshing and (relatively) healthy side! I doubled the celery seeds and added finely chopped Italian Flat Leaf parsley (only because I am growing it and needed to harvest some). Also, I only had one can of corn of corn so for the second can of corn I used the equivalent of frozen corn- and I also replaced the can of baby peas with the equivalent of frozen baby peas. The texture, taste, ease, and economic value of this salad was just what I wanted. Nice not to have a cream based salad during hot summer picnics too. We ate some right off the bat, and although better with time to meld-- this could be served right away. Only thing I might do differently next time is double the pimentos or add half of a red bell pepper (chopped), because the red color is really nice in the salad. Banana Bars
I did recipe almost exactly as submitted except for the following: *I only had 1% milk, so I added a couple of T. of sour cream. *Sprinkled some cinnamon and nutmeg to the dry mixture. *Used 1 1/2 bananas in the batter. I made these last night and all but one bar (that I am saving for my hubby) were eaten by 7pm! My mom went crazy over these and my friend kept saying "delicious" over and over. This is an awesome recipe and is one of the few that I have found that calls for only two bananas- which is perfect if you only have a few you are trying to use up. This is a keeper and I will be making again- in fact, I plan on buying some bananas right away for the purpose of letting them ripen for this recipe! I loved the texture and the icing is heavenly with the taste of the fresh banana. If you wanted to do a lighter version you wouldn't have to have the icing, but, man, is it good! Great submission!!!

Banana Crumb Muffins
Wow. These really are as great as all the hype says they will be! I followed a few suggestions adding vanilla, nutmeg, a bit more cinnamon, and substitued oil for the butter. I tried adding the topping 3/4 of the way through baking, but the muffins were far enough along that I had trouble getting the topping to stick. Once I took them out of the oven I just zapped the topping in the microwave with a bit more butter and then drizzled it over the top. Slightly and gooey and crumbly at the same time. Worked great! They popped right out of the muffin tin and stayed soft for the few days that I managed to make them last. I just made them a week ago and plan to make them again today! I actually bought bananas with the purpose of letting them get over ripe so I can make these muffins again! Congrats on the success of your great recipe!
