I have always loved to experiment while cooking. Most of the time, I will take several recipes and combine them into my own custom version. In the past few years, I have been making more healthy meals, therefore, I have to find substitutes for many ingredients and have had fun doing that. My husband says that he can't tell the difference in the taste....Now THAT makes me happy!

Fully Loaded Deviled Eggs
Great change to our regular deviled eggs! To make it a bit on the light side I used fat free sour cream, 2% cheese, olive oil mayo and sautéed the onions with only a few drops of EVOO. I also reduced the amount of cheese and increased the sour cream for a creamier filling. An added tablespoon of sweet pickle relish gave it that 'tang' that we love too! Awesome recipe...thanks for sharing mommyof3!

Easy Slow Cooker Enchiladas
I have been making this for many years after finding it in the TOH magazine. It is such a simple recipe that can easily be altered to fit your taste (although I never have). We do use flour tortillas, but have no doubt that corn tortillas would be just as good {or better}...I may just try them next time! Note: The photo added was taken before I actually turned the slow cooker on. After 3 - 4 hrs on low, it turns into cheesy goodness! Great topped with lettuce, black olives, and sour cream too.

Barbie's Tuna Salad
WONDERFUL change from my norm that consists only of tuna, mayo, pickles, boiled eggs, and pepper. I used 2 5oz cans albacore tuna (drained very well), 3 Tbsp mayo w/ olive oil, 2 Tbsp sweet relish, and just a few dashes of each spice. Also added a couple chopped boiled eggs and a few dashes paprika. Great combination! Served on Melba toast. Note: I didn't know whether to use grated or shredded Parmesan cheese so I decided not to add it at all, which helped out with the calorie/fat count too! I will forever use this as a base. AWESOME recipe! Thanks for sharing!
