Boyscout beans

Reviewed: Jul. 13, 2013
Had a chance to test this in a family member. They normally don't eat much at any meal but they finished the whole bowl full. LOL

Amazing Whole Wheat Pizza Crust

Reviewed: Jun. 18, 2013
Only change I made was two tbs of dough enhancer as I was using whole grain home ground wheat. Topped it with mozzarella, sauce, roasted red peppers, pepperoni and Provolone cheese. Forgot to drizzle olive oil on the cheese so it got a little to brown but they raved about it at a meeting said it was the best pizza they ever had. This is going into my recipe box here and on the computer.

Get a Husband Brunswick Stew

Reviewed: Aug. 23, 2012
My mom loved it and my Grandfather use to make the best stew. He made it when the Carnival was in town and the Volunteer Fire department raised money by selling food. So she has a memory of what it should be like. Was a big hit with my club also. Oh I am from Virginia the true home of Brunswick stew. LOL

Big Soft Ginger Cookies

Reviewed: Nov. 12, 2011
Big hit. I made two batches so far. One just like the recipe and the other with smart balance not butter. and stevia not sugar. I also used whole wheat all purpose on the second batch. Still a big hit for all not just the health conscious.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Nov. 12, 2011
The first batch I made per the recipe. Big hit. I wanted to make some more healthy versions of same. So I replaced the butter and shortening with smart balance. The brown sugar with 2/3 cup of Agava nectar and 1 table spoon of molasses. The sugar was replaced by stevia. I used whole wheat all purpose on the later batches also. One not old style rolled oats not quick oats. I also had a batch I made with cranrasins. All were hits too. I had to mash them down to get the chewy flat look on all versions. Great cookie I made a ton for Christmas gifts. They freeze well too.

Vegan Agave Cornbread Muffins

Reviewed: Oct. 13, 2011
Was a big hit. I used whole grain fresh ground soft white wheat berry which is used for pastry flour and added 1/4 cup thawed frozen sweet corn and 2 pinches of cayenne pepper. But the base would have been a hit with out all that. I'll use it again and recommend it to friends.

Blender Hollandaise Sauce

Reviewed: Aug. 8, 2011
I made this and it tasted good but it didn't thicken enough and I'm not sure it got hot enough to kill any microbes in the egg. I didn't measure the the temperature but if the eggs and lemon etc. are all cold or cool I don't believe it gets hot enough to be safe. I usually use the bowl over boiling water method with a good whisk or for a big batch an immersion blender. I don't plan to use this recipe again. This is another time that quick and easy is not better. Luckily nobody got sick.

Easter Meat Pie

Reviewed: Apr. 24, 2011
This turned out great. I had to halve the recipe I did not realize it was for 2 pies. The texture, look and oh man the taste were great. Next time I may add some spinach or broccoli or maybe cauliflower to make it into a meal in one dish thing. I was surprised that it was so tasty with out any spices. I will definitely make this again.

Choereg (Armenian Easter Bread)

Reviewed: Apr. 24, 2011
When it comes to baking my cooking skills drop considerably so I may have done something wrong. I had to add almost 3 cups of flour because the dough was not a dough but the consistency of thin oatmeal you would have for breakfast. It was about right then but of course it was a little heavy then. I have not tasted it yet but I bet it will taste ok but it will not be lite and/or fluffy.

Boilermaker Tailgate Chili

Reviewed: Jun. 22, 2009
This is a good recipe except for one thing. Carrol Shelby who was one of the founding fathers of the first and biggest chili cookoff in the world (The Terlingua chili cookoff) said he who puts beans in chili knows beans about chili. True chili has no bean and very little or no tomatoes in it. I come from Dallas and also lived in San Antonio where chile got its start in the USA. Dallas had one of the other founding fathers for Terlingua in it and the Chili queens of San Antonio were cooking chili in Texas before chili was well know in the USA. Nuf Said.

Quick Gnocchi

Reviewed: Jun. 19, 2009
In order for this to come close to being real Gnocchi shouldn't it have some egg or egg yoke in it? Just like most pasta the egg helps it bind together. I've made Gnocchi before and it is a pain and a quick recipe is most welcome but I added egg to the mixture.
