Easy OREO Truffles

I made these last Christmas for a gift for my choir's gift exchange. I coated them in milk chocolate, and then, after they'd cooled, I melted white chocolate and poured it into a squirt bottle. On the top of each ball, I made little musical notes w/ the white chocolate. They looked VERY professional. I put each ball in a tiny paper cup (mini cupcake liners) and put them in a flat box. They were quite a hit and SO yummy.

White Cheese Chicken Lasagna

Great, full flavor, despite its sort of bland color. Instead of the 1/2 cup of butter, I used a couple tablespoons of olive oil and two tablespoons of butter. That was plenty. My husband isn't a big spinach lover, but he really liked this casserole. I'll definitely make this again.

Delicious Ham and Potato Soup

Just made this the other night, and I think it's the best creamy soup I've ever made. I use Wondra flour because it is so easy in a white sauce w/o any lumps. I will use this again and again, as we love potato soup of any kind. By the way, I used red-skinned potatoes and left the skins on.

Slow Cooked Corned Beef for Sandwiches

I, too, used the Crock Pot, and it was wonderful ( I halved the recipe). It reminded me of how my mother's brisket tasted. I think she used a pressure cooker, though. We had it as a meal one night, and for Reubens the next! Yum, yum.

Spinach Basil Pesto

This is great, and it's easy since I have basil growing in a pot on my deck. I found a food processor easier to use than the blender, though.

Sausage Balls

I've made these for years. I always add about 1/2 cup of milk so they bind together. After I scoop out the balls, I wet my hands and roll them into more-perfectly round balls. Works great! Tastes fantastic.

Cheeseburger Soup I

We love this soup! I, too, used twice the ground beef, and I used Velveeta, since it melts so easily. The first time, I made the thickening, but felt it wasn't necessary, so I haven't been using it lately. I think it's thick enough. It sure warms you on a cold winter's day! It's always a hit at our Super Bowl party!
