Enchilada Casserole

Chicken Florentine Rice Casserole

This is a really simple, good recipe that can be altered to taste, which is something I really like. I didn't have enough spinach the first time, so I used half spinach and half broccoli. I also used more parmesan cheese. This time I'm going to use all spinach and add a bit of nutmeg and some mushrooms. By the way, cube the chicken first then cook it... I think it's easier.

Oatmeal Peanut Butter Cookies

Ramen Coleslaw

This is so good! I made it for small get-together but almost didn't take it - I wanted to eat it all myself. I cut the sugar down, and I used red wine vinegar (all I have). I also skipped the soup powder, and put half the noodles in when I made the salad and half right before serving. This is great! Thanks!

Bowler Beef Marinade

I used this on tenderloin I served to company, and I got nothing but compliments. The only change I had to make was to use dried ginger. I'm sure when I make it with fresh ginger it will be even better.

Champagne Chicken

Roasted Vegetables

This is so good, and so easy!!! I have made this three times, with different veggies each time, and it has come out wonderful! I don't like rosemary so I skip it, and the last time I had to use dried thyme, and it is still good. Be sure to add softer vegetables (summer squash, mushrooms, etc.) during the last 10 minutes or so or you'll have some mush. The second time I made it, I used sweet potatoes, regular potatoes, red and green peppers, carrots, onions, mushrooms and yellow squash. The last time I only had white potatoes, carrots, mushrooms, and asparagus. No matter what I use we like it. Thanks so much!

Inside Out Ravioli II

This is really easy and yummy. I didn't have enough cheddar so I used mozzarella as well. I also forgot to hold out some of the sauce, and it was fine. I'm going to try it with fresh spinach next time.

Marinade for Steak I

Baked Lemon Chicken with Mushroom Sauce

Shredded Brussels Sprouts

I had to use frozen baby brussels sprouts (the frest just didn't look good!). I defrosted them a little and then processed them whole in the food processor. I can't eat onions, so I increased the seasoned salt slightly, and they were excellent. Thanks for the great recipe!

Lindsay® Olive Tea Sandwiches

Made these exactly as written, and they were great. Disappeared first, and I only got one. I'm making more as soon as my house is clean! ADDED 1/1/08 I have made these several times and they are always a popular item. What I do now to save time and effort is mix the cream cheese in with everything else and just spread it all together. Saves a step and is just as good.

Flax and Sunflower Seed Bread

Laura's Unbelievable Chicken and Pasta

I used leftover chicken breasts and fresh spinach. I also skipped the tomatoes. This was really good; my only complaint is that my husband ate so much I didn't get to save any leftovers!:) I bet it would be good with fresh mushrooms.
