Enchilada Casserole

Reviewed: Nov. 5, 2002
I also added corn, soaked the tortillas in the sauce and used ground beef. This was great, and I've made it several times. Thank you for sharing this recipe!

Yum Yum Yum!!! I made them with black beans instead, and they are wonderful. Thanks!

Gourmet Sweet Potato Classic

Reviewed: Nov. 14, 2002
I used brown sugar instead of white (cut it in half for my taste) and added nuts to the potatoes as well as the topping. Went over great at a big luncheon and a family gathering. Thanks!

Basil Chicken and Pasta

Reviewed: Nov. 20, 2002
This was very good. I agree that the sauce should be doubled. I also increased the parmesan cheese to 1/3 cup (we really like it). Fresh mushrooms would be a great addition. Thanks for the recipe!

Artichokes Parmesan

Reviewed: Dec. 1, 2002
My husband loved these. I thought they were okay. I agree with the other rater who said they'd be better with mushrooms. I did add the juice from the tomatoes to add moisture, so it wasn't dry.

Champagne Chicken

Reviewed: Dec. 1, 2002
I made this for our anniversary dinner. Used the dry champagne, and it was great. I will definitely be making this again. I did double the sauce ingredients because we prefer more sauce. Excellent! Thanks, Barbara!

Mixture for Meatballs, Meatloaf or Burgers

Reviewed: Dec. 5, 2002
I used half ground pork and half ground beef and made meatballs. I also used french bread that I processed and didn't add any water. Not at all wet and they held together well. I think something is missing though, which is why it's only 4 stars. Next time I'm going to add garlic and some italian spices and see if that helps. Thanks, Peter!

Potato Pancakes I

Reviewed: Dec. 5, 2002
Good and easy. I have to skip the onions and so they ended up a bit bland. I made them much thinner, too, as I like them very crispy. Thanks!

Creamy Dill Cucumber Toasties

Reviewed: Dec. 17, 2002
Easy and tasty. My husband LOVED these things. My only problem with them is they are a bit salty. I cut the dressing mix but it didn't make that much of a difference. Otherwise, wonderful!

Ramen Coleslaw

Reviewed: Feb. 1, 2003
This is so good! I made it for small get-together but almost didn't take it - I wanted to eat it all myself. I cut the sugar down, and I used red wine vinegar (all I have). I also skipped the soup powder, and put half the noodles in when I made the salad and half right before serving. This is great! Thanks!

Breakfast Casserole III

Reviewed: Feb. 1, 2003
This is a nice meal, but I didn't love it. My husband, a huge breakfast fan, said it was good but not great. It was really soggy, I don't know what went wrong. I may try it again with some tweaks, but I'm not sure.

Tamale Pie II

Reviewed: Sep. 27, 2003
I really like this recipe with these changes: use a 10x13 pan. Increase corn meal to 1-1/2 cups. I also like to add a few TBS of butter to the mix, but not necessary. Add 1 cup of black olives to meat mixture and put cheddar cheese into the meat mixture. Let meat simmer for 15 minutes before putting it into pan. (I also add a bit more tomato sauce because of the simmer time) We also like it spicier so I increase the chili pepper to taste. Also add 2 tsp sugar or splenda. Put meat mixture into empty pan and top with the corn meal mixture. Bake as directed.

Bacon and Potato Soup

This was really good! I made a few minor changes: increased the cheese and added 1/2 cup of milk. This went over so well with my husband that it will be a winter staple recipe. Thanks!

Lemony Steamed Fish

I used a bit more spices than called for, but the fish was still a bit bland. However, the fish was still really good and it's a easy, healthy meal.

Oatmeal Peanut Butter Cookies

These were great. Really chewy. I made regular pb cookies last week, these this week, and we voted. This recipe won over regular, hands down! Thanks for our new favorite peanut butter cookie!

Chicken Florentine Rice Casserole

Reviewed: Feb. 1, 2004
This is a really simple, good recipe that can be altered to taste, which is something I really like. I didn't have enough spinach the first time, so I used half spinach and half broccoli. I also used more parmesan cheese. This time I'm going to use all spinach and add a bit of nutmeg and some mushrooms. By the way, cube the chicken first then cook it... I think it's easier.

Simple Peanut Squash

Reviewed: Mar. 1, 2004
This is a really easy, tasty recipe. The only change I will make next time is to cook it a bit longer. I prefer the squash a little softer. Otherwise, excellent recipe. My husband, not a big squash fan, LOVED it!!! (Always good with a veggie recipe!)

Special Buttercream Frosting

Reviewed: May 21, 2004
I made this recipe twice before writing the review: once with regular shortening (actually half butter, half shortening), and once with butter-flavored Crisco. The butter flavor version was much tastier, but if color matters, it's not white. This is a very good recipe either way, and stays creamy (no hard "shell") over time. Thanks, this is in my permanent file.
