Brined and Roasted Chicken Pieces

Basic brine. I put garlic in with the salt/sugar mix. Used boneless chicken breasts and grilled them. Easy and tasty, doesn't make the chicken salty at all.

Laura's Unbelievable Chicken and Pasta

I used leftover chicken breasts and fresh spinach. I also skipped the tomatoes. This was really good; my only complaint is that my husband ate so much I didn't get to save any leftovers!:) I bet it would be good with fresh mushrooms.

Ham and Chicken Casserole

Based on other comments, I added about 1/4 cup cheddar cheese and additional paprika to the sauce. I also cut the milk to 3/4 cup and replaced with 1/4 cup sour cream (added with pasta and meat). I didn't think there was enough pasta so I ended up doubling that. When it was done it reminded me of mac & cheese with chicken. I also skipped the celery, but next time I am going to saute while the butter melts.

Breaded Parmesan Chicken

I used plain bread crumbs, shredded Parmesan cheese, and bone-in chicken. Otherwise followed exactly as written. I think the unseasoned crumbs helped keep the spices from being overpowering. I also started the chicken with the ribs up, so the meatiest parts were in the butter first. The chicken wasn't dry at all, and it was very tasty.

Shredded Brussels Sprouts

I had to use frozen baby brussels sprouts (the frest just didn't look good!). I defrosted them a little and then processed them whole in the food processor. I can't eat onions, so I increased the seasoned salt slightly, and they were excellent. Thanks for the great recipe!

Lower Fat Banana Bread I

This was good the first time, when I followed the recipe exactly. It was great the second time, using apple sauce instead of margarine (made it moister), 2 large bananas (instead of just one cup), and adding walnuts. The third time I also added cocoa powder to half the batter, which was also excellent. Thank you Lauren.

Granny's Cherokee Casserole

This was one of three meals my stepdad could make (bacon and eggs and spaghetti rounded out the week!). He also put green olives, sliced in half, in the pot. I thought he made this up until I saw it on allrecipes! Really good, even without all the spices.

Special Buttercream Frosting

I made this recipe twice before writing the review: once with regular shortening (actually half butter, half shortening), and once with butter-flavored Crisco. The butter flavor version was much tastier, but if color matters, it's not white. This is a very good recipe either way, and stays creamy (no hard "shell") over time. Thanks, this is in my permanent file.

Simple Peanut Squash

This is a really easy, tasty recipe. The only change I will make next time is to cook it a bit longer. I prefer the squash a little softer. Otherwise, excellent recipe. My husband, not a big squash fan, LOVED it!!! (Always good with a veggie recipe!)

Chicken Florentine Rice Casserole

This is a really simple, good recipe that can be altered to taste, which is something I really like. I didn't have enough spinach the first time, so I used half spinach and half broccoli. I also used more parmesan cheese. This time I'm going to use all spinach and add a bit of nutmeg and some mushrooms. By the way, cube the chicken first then cook it... I think it's easier.

Oatmeal Peanut Butter Cookies

Bacon and Potato Soup

Tamale Pie II

I really like this recipe with these changes: use a 10x13 pan. Increase corn meal to 1-1/2 cups. I also like to add a few TBS of butter to the mix, but not necessary. Add 1 cup of black olives to meat mixture and put cheddar cheese into the meat mixture. Let meat simmer for 15 minutes before putting it into pan. (I also add a bit more tomato sauce because of the simmer time) We also like it spicier so I increase the chili pepper to taste. Also add 2 tsp sugar or splenda. Put meat mixture into empty pan and top with the corn meal mixture. Bake as directed.

Breakfast Casserole III

This is a nice meal, but I didn't love it. My husband, a huge breakfast fan, said it was good but not great. It was really soggy, I don't know what went wrong. I may try it again with some tweaks, but I'm not sure.

Ramen Coleslaw

This is so good! I made it for small get-together but almost didn't take it - I wanted to eat it all myself. I cut the sugar down, and I used red wine vinegar (all I have). I also skipped the soup powder, and put half the noodles in when I made the salad and half right before serving. This is great! Thanks!

Creamy Dill Cucumber Toasties

Easy and tasty. My husband LOVED these things. My only problem with them is they are a bit salty. I cut the dressing mix but it didn't make that much of a difference. Otherwise, wonderful!
