White Almond Wedding Cake

Reviewed: Mar. 25, 2014
My testers loved it! I think it's a bit too sweet and may cut back on the sugar next time it's made just for us. I have used all vanilla for those who don't care for almond flavor and I have also toned down the almond by using less. Turns out great every time. Recently separated batter in two parts and added 1/3 cup of cocoa powder to make half chocolate-half vanilla...YUM. Thank you for posting recipe.

Simple White Cake

Reviewed: Sep. 29, 2013
So I've been searching for a white/vanilla cake recipe and I think this will be a keeper. I have to say that I noted great tips from a few reviews. In order to provide a fair review though, I first tried the recipe as written. MY results: a really moist/fluffy cupcake. I beat butter/sugar as suggested until fluffy and then beat well after each addition of each of the remaining ingredients. The batter was fluffy, "hard" - almost looked like softened ice cream. I was able to fill liners with a perfect scoop of batter (I used an ice cream scoop). THIS WORRIED ME because I am used more "runny" batters. My results: 18 really moist/fluffy cupcakes, light flavor, not too sweet - I think any frosting will compliment this recipe. I noticed too that the liners were not saturated with grease/oil like in many recipes (box or scratch) previously tried. Baked at 350 degrees for 15 minutes. (I also noticed they looked kind like corn bread at the top when done.) The true test will be tomorrow - let's see how well they hold over night - I will put some in airtight container at room temp & a few others in fridge. Thanks for sharing! :)

Campbell's Kitchen Easy Turkey Pot Pie

Reviewed: Sep. 12, 2013
Great base recipe but didn't really care for the bisquick topping - too soft and consensus in our home is that we like a crispy crust. Will definitely make again but omit the bisquick mix. I did pour filling into a frozen pie crust (baked for about 10 minutes first) and then poured bisquick mix. It turned out beautifully! Thanks for sharing your recipe. :)

Easy Pancakes

Reviewed: Aug. 10, 2013
I chose this because I wanted to make quick & easy pancakes with ingredients on hand. I didn't even have to read reviews to know that baking powder was too much. I decreased to less than a 1 Tbsp (eye balled it) and 1/2 the salt. I know baking powder helps batter thicken up once it sits for a few minutes & I added extra milk bc I didn't want them too thick. Added fresh raspberries to the last 2-3 cakes. Good recipe - good basic ingredients and definitely adaptable to one's taste buds. Keeper. Thanks for sharing.

Chicken Chimichangas with Sour Cream Sauce

Reviewed: Aug. 5, 2013
I wanted a simple sauce recipe for veggie enchiladas & this worked nicely. I didn't care for the "grainy" taste but I may have under whisked? I used chicken broth instead of water to give it more flavor. I will use again and adapt flavor. Hubby & baby enjoyed dinner so it's good enough for me! Thanks. :)

Mmm-Mmm Better Brownies

Reviewed: Aug. 3, 2013
I chose this recipe for ease & simplicity of ingredients. It's a keeper! I did use melted butter instead of oil, 3/4 cup sugar - I planned to frost them so I opted to reduce sugar in brownie. I also baked them in my mini-brownie pan, baked for about 8-10 minutes. They turned out moist & yummy, especially after they sat for few hours. Next day they were even better (stored in plastic, air-tight container. I used the Brownie Frosting recipe on this site - and although it was too sugar, it did add a nice touch to the brownies. Thanks!

One Bowl Chocolate Cake III

Reviewed: Apr. 20, 2013
Loved it...especially the next day. Cake turned out moist & not too sweet. I was glad for the warning that batter would be thin/runny. Baked 2-9" round cakes. My only "fail" was baking too long - I baked for 25 minutes but I think it was probably done at 20-22. I frosted with "Caroline's Chocolate Fudge Frosting" found here and OMG - it was delicious! Used the entire batch to frost cake. Great reviews from all who tried it. Thanks for sharing!

Easy Dinner Hash

Reviewed: Jan. 18, 2013
Recipe is a great idea! I used ingredients on hand. Sauteed onions in bit of olive oil, added raw diced potatoe, sprinkled with pinch of sea salt and covered to cook until soft/crispy. Placed aside. In same skillet, browned Jimny Dean Reduced fat sausage. Added potatoes, mixed veggies from can & a bit of frozen chopped broccoli. Covered on low heat. Thx to other reviews, I topped hubby's serving with 2 fried eggs. Breakfast bliss for dinner. Thanks!

Coconut Macaroons

Reviewed: Dec. 23, 2012
Recipe 4 stars b/c it was easy to follow. Macaroon turned out OK but I wasn't thrilled w/ flavor. Used parchment paper - did not stick. Mix did not turn out runny for me - seems it lacked SOMETHING...not sure what. Not sure if I'll try again.

Pumpkin Ginger Cupcakes

Reviewed: Dec. 13, 2012
These turned out really good. I didn't like taste of ginger so I used very little in the mix, next time I will leave out all together & only use as a garnish if gifting them. I followed suggestions by other users - creamed butter & sugar well and was able to scoop batter into cups. Also used suggested frosting: 1/2 cup unsalted butter, 4oz cream cheese, 1 tsp vanilla & 2 cups powdered sugar, 1 tsp cinnamon (mixing cinammon well into sugar first). This frosting was AMAZING! Cook time in my oven was 18 minutes & yielded 30 cupcakes. Thanks for sharing!

Waffles I

Reviewed: Sep. 3, 2012
Good basic recipe - simple ingredients and allows for modifications to suite individual tastes. I used yogurt instead of oil, added 1 tsp of brown sugar, a total of 2 tsp sugar & 1 tsp cinnamon. Served with blueberries, bananas, walnuts and a little bit of syrup. Family loved them! I like my waffles a little sweet because I prefer them with a little bit of butter & no syrup - so next time I may add more sugar. Leftovers were placed in ziplock and in fridge to toast during the week! Keeper. Thanks.

Mom's Rum Cake

Reviewed: Jun. 17, 2012
Recipe itself is very good -. I messed up on the glaze & cooked it too long so it got really thick. Also only used 1/4 cup of rum in glaze as I did not want it to turn out too strong. You can taste/smell the rum in the cake so that turned out well. First time baking Rum Cake - will definitely try this again & hopefully get a better result. Thanks for sharing.

Sam's Famous Carrot Cake

Reviewed: Apr. 9, 2012
Used this recipe for Easter cupcakes - bread was moist & stayed moist after refrigerating a few. Definitely a keeper. FYI: used dark, non-stick, metal cupcake pans, baked at 325 degrees for 20 minutes. For icing, I mixed 1 stick salted butter with 4oz of cream cheese until creamy. Initially added some of the reserved pineapple juice but didn't notice a difference in flavor, so I added a splash of Almond Extract. Used 3 cups of confectioners (x10) sugar. This was enough to frost 24 cupcakes. This recipe is a keeper! Thanks for sharing.
