Iced Pumpkin Cookies
Oh my, these are some yummy cookies! I used whole wheat flour and didn't have a can of pumpkin so I used a box of pumpkin pie filling. I thought that perhaps the added spices from the pumpkin pie filling might overpower, but they taste so good. I made the icing, but added a little light corn syrup to make the icing shiny. I think this is a new staple during the holidays!
