Sweet Banana Bread

This bread is "bangin"! The only changes I made was I used instant vanilla pudding, reduced the salt to 1/4 tsp., used 3 large ripe bananas (didn't measure) and used 1 stick of butter in place of the shortening. It is sweet and very, very, moist...its a keeper!

Double Chocolate Brownie Cake

This cake is awesome! I was ready for it to be dry, but it is moist and oh so flavorful! The first time I made it I didn't have chocolate pudding so I used vanilla and it was still great. I made today with chocolate pudding and waiting for the results when it cools...I frosted with a chocolate glaze. Do not hesitate...its easy and I think the sour cream is what makes this so yummy and moist!

Italian Style Pork Chops

As my kids would say...these are "bangin". So far, these are the best pork chops I've ever eaten...I normally don't care for pork chops. I did make some changes but nothing drastic and they came out perfect. I used Ritz crackers...1 1/2 sleeves crushed with rolling pin in baggie, 3/4-1 cup grating cheese and everything else stayed the same. This was just enough coating for 10 thin chops...I sprinkled on top after put in pan, turned and sprinkled again. I baked at 400 for 20 minutes turning after 10...the last 2 minutes of the final 10 I turned on broiler...I'll say again...best chops ever!

Escarole Soup

I have been married for 30 years and this is one of the best recipes I have ever made. I pretty much followed the recipe to a 'T'. I did add an extra box of chicken stock because I added cooked ditalini noodles to the soup which absorbs some of the broth. I also used a big bag of fresh spinach instead of escarole...only because it is more of a preference with my family. Other than that...wow, never made soup myself with such flavor!

Chili Rick's

Now I am basing this review on other's oooo's and ahhhhh's because I don't like chili. Every time I go to a picnic, people ask me "You are making your chili aren't you?" I stick pretty much to the original recipe. To keep the clean up down, I fry the bacon crisp, pull it out to drain on paper. I then put the sausage and ground meat in same pot and brown, then drain. I put it back into the same pot with the crumbled bacon then add the rest of the ingredients and stir (no seperate meat frying pan necessary). I use Bush's chili beans in hot sauce and sometimes even add tomatoes with chili peppers mixed in. I simmer for one hour covered then one hour uncovered. I am making this today and will transfer it into my crock pot as it makes it an easier transport and server. Anything that doesn't fit stays home for leftovers tomorrow :) As others have mentioned, I too offer trio mexican shredded cheese on the side for those who want to top it off. Although this is a time consuming recipe as well as a little pricey (around $40), the pats on the back are well worth it.
