Rosemary Roasted Turkey

Delicious turkey. I have made this using chicken, which I think I like better. Only downside of this recipe is that the drippings are mostly olive oil based and a good gravy could not be made. We love gravy with homemade dressing and this was a challenge. Our 12 1/2 lb. turkey was done in 2 1/2 hours and I let in rest for 30 minutes. Very moist and perfectly cooked.

Spiced Pot Roast

This was very good and moist. I didn't have chutney so cut up a ripe mango and it was fine. I liked the hint of curry without being overpowering.

Garlic Chicken

Delicious, moist and very easy. I used a combo of butter and olive oil and also added more garlic. I did find I had to use more bread crumbs and parmesan. I drizzled the leftover butter/olive oil mixture over the top to add more flavor and crunch. So easy as I always have these ingredients on hand.

Quick and Easy Chicken

Yes, it was easy. I made the recipe as written but doubled the sauce. Sauce flavor was bland and tasted like a cheap bottled mix.

Santa Fe Style Chicken

I love this recipe. Very flavorful and healthy. I use a heavy hand with the ingredients for 3 large (skinless, boneless) chicken breasts and broil for about 5 minutes per side. I only flatten the chicken a bit with my hands. Fresh cilantro is a must. I marinate all afternoon.

Gorgonzola Stuffed Chicken Breasts Wrapped in Bacon

I made this last night for dinner guests. It was very good. I made the slices on the top thick part of the breast and stuffed it. It looked very nice on the plate because you could see the stuffing and the bacon was wrapped around it. Also, none of the stuffing fell out. I did have to broil after cooking to crisp up the bacon a bit. I will definitely cut back on shallots next time as they seemed to dominate. I wish I had read the review that deglazed with the marsala before I made the dish. I think that would have added a good finishing flavor. Definitely a keeper recipe though. Looks like more effort than it really is.

Rosemary Chicken with Orange-Maple Glaze

Doubled all sauce ingredients and substituted chicken broth for wine. Used good quality Grade B maple syrup from Vermont. I also had to mix some cornstarch with orange juice to thicken sauce, adding near the end of cooking. Like another reviewer, cut chicken into thick lengthwise pieces so rosemary permeated all.

Fresh Strawberry Pie I

Tasty for a healthy chicken recipe. I used skinless, boneless breasts, added more olive oil and garlic. I substituted cilantro for the parsley to add additional flavor at the end.

Fresh Blueberry Pie II

Everyone loved it!!! I used 3 pints of blueberries for a regular 9" pie, splitting 1 1/2 pints raw and adjusting the cooking ingredients for 1 1/2 cooked.
