About this Cook
I'm always interested in finding healthful, make-ahead meals that freeze well. I'm also interested in cooking once a week and ideas about cooking for one or two people.
My favorite things to cook
Pot Roast, Macaroni & Cheese from scratch, Meat Loaf with Caramelized Onions, Chili, Ratatouille, anything I can make in my Dutch oven.
My favorite family cooking traditions
Sunday dinner, holiday meals
My cooking triumphs
I seriously regretted throwing away my tattered, splattered, dog-eared copy of the Better Homes & Gardens cookbook that I'd received for Christmas in 1983. Fortunately, I located a mint-condition copy several year's later.
My cooking tragedies
The first time I made chili, I was sure a "clove" of garlic was the whole bulb. I thought the chili was delicious but some people thought it was intolerable.

Ham and Noodle Casserole
Delicious and easy to substitute ingredients. Probably needs more soup or more sour cream than called for. Would have been too dry if made with one can of soup. I didn't have an onion - substituted one packet of dry onion soup mix. I only had about 1/3 Cup sour cream so I added a second can of soup. It still seemed too dry so I added milk (about 3 tablespoons). I used Cream of Mushroom soup. I used two cups shredded cheddar. Did not have dry bread crumbs. Cut crusts off 4 slices of white bread, diced bread and lightly browned bread crumbs in melted butter. Added diced garlic. Baked uncovered for 50 minutes. Makes a very full 2 quart casserole. Will definitely make again.
