About this Cook
I'm a stay at home mom of 2 busy kids ages 11 and 7. I married the man I fell in love with when I was 18. 16 years later and I still smile when I think of him. I enjoy the outdoors, gardening, hiking, walking/running etc, cooking and baking and lots of other things. I'll try anything once..within reason of course!
My favorite things to cook
I love to bake. Cookies, breads and more recently pies. I also enjoy grilling. I definitely prefer preparing a "meal" rather than just making dinner..if you know what i mean
My favorite family cooking traditions
Cinnamon buns on special mornings and decorating Christmas cookies with my kids, nieces, siblings and mom.
My cooking triumphs
Bread. I love being able to serve my kids bread with no preservatives.
My cooking tragedies
Pork chops. I stink at them. I don't really care for them and I overcook them everytime. Oh well!

Irish Boxty
Very good. Made this for lunch with leftover St. Patrick's day potatoes. I put a little sour cream and salsa on top and ended up with a very full belly! Will make this again for sure.

Nana Dot's Irish Soda Bread
I love you Nana Dot! This was OUTSTANDING. The only changes I made were: no carway seeds (it was optional anyway) and I did not have any currants so I used craisins along with the raisins. Excellent!

Corned Beef and Cabbage I
Very good, simple and the way I have always made it. I do alter the cooking time a little. I let the meat simmer basically all day. I add all the veggies about 3 hours before I will be serving dinner. Always perfect.
