Baked Potato

Well this is a simple baked potato not sure you need a recipe for this but for those of us who never cooked a baked potato here is a very simple recipe for it. Topp with sour cream chedder cheese bacon bits and green onion and YUMMO!!

Banana Muffins II

These were good mine were a little dry but I checked them in 20 min and they were completely done so watch yours. I made 12 large muffins adding vanilla cinnamin to the batter may add more flavor. All and all this was a great low cal low fat muffin.

Rhubarb Cheesecake Pie

This was good but different. I love the rhubarb mixture I could eat just that with a spoon, but I am not sure how I like it with cheesecake. I am glad I tried it but not sure I will make again. I dont think its nescesary to prebake the pie crust. If you are thinking about trying this recipe DO IT you will be glad you did.

Apricot Chicken I

This was good the chicken itself I'd give a 3 but the sauce I'd give a 5 so here is a 4. Maybe letting it marinate for a while would help it's so easy took me 5 min to get it into the oven and definatly reduce cooking time mine took 30 min. Sauce was great on rice too.

Barbie's Tuna Salad

OUTSTANDING!! This tuna salad was great. I was skeptical because of the combination of ingredients but I am so glad I tried it. The flavors all marry so well together I hate relish but loved the sweetness it added. I will make this tuna all the time now. Who would of thought such a strange combination would make something that tastes so wonderful.

Gramma's Apple Bread Pudding

OMG this was NOT GOOD. I ended up with hard chewy things in my bread pudding that my kids thought was hamburger. It was the milk that became solid when cooked. I see no need to cook the milk sugar butter first. The apples dried out. I may try this again but I will put the apple raisins and 1/2 brown sugar on the bottom of pan add the bread and then mix milk eggs cin vanilla sugar and cooled melted butter and pour over bread then bake. the sauce was OK but I would use heay cream instead of milk for a higher fat content so its creamy. So dissapointed with this one

B.L.T. Salad with Basil Mayo Dressing

My husband said give it a 10. Everyone loved this salad. I made dressing in food processor and added a clove of garlic and 1/8 cup basil and 1-2T milk to thin it out. Cooked bacon in oven on a cookie sheet, and crutons are a must in this salad. I may add all the basil next time. I was hesitant because of other reveiws but I loved the basil flavor.

Triple Berry Crisp

Wondefful...The crisp topping is awesome..I love it on top and bottom. I didnt have blackberries but it worked out just the same I added a bit more sugar because the raspberries and Blueberries can be tart. I will use this recipe with other fruits too like apple, peach strawberry rhubarb YUM!!!

Mushroom Chicken Piccata

I dont think the egg is nescessary in the coating. I used chicken cutlets and browned them removed from pan added olive oil the sauteed shrooms shallots and garlic then deglazed with wine added lemon and mixed starch with broth added to pan until thickend returned chicken to pan and topped with parsley. Overall it was a easy one pan meal. served with rice pilaf

I have made both ways with mini dogs as a snack or with regular hot dogs also slit in the middle and put american cheese inside then wrap. The recipe is on the side of the cresant roll can.

Funnel Cakes I
