Hamburger Casserole

This is the perfect casserole! Made as written with the following changes or specifics: used 90% lean pastured ground beef, Trader Joes vegetarian chili, a jar of Trader Joes Corn & Chile Tomato-less Salsa (in place of both corn & salsa) & homemade taco seasoning (from this site). I didn't have the baking dish it called for so baked in very deep glass vessel, done in three layers with Trader Joes shredded Mexican blend cheese, including on the top. As other reviewers advised, I baked it at 350 degrees. OMG! YUM! A very homey, comforting dish with a spicy kick.

Old-Fashioned Rice Pudding II

Used 1% milk and Splenda. Made as written and it came out a bit runny. My British mother, who's been eating and making rice pudding for 80 years, advised a change to 275 degrees and baking for 2 hours. Tried that the second time and it became thicker and creamy.

Pub-Style Vegetarian Chili

I sub'd chopped zucchini in place of mushrooms but was faithful to all other ingredients. LOVE this chili! The one thing I did do differently is cook it longer, and with the lid off. The first 30 minutes I simmer with the lid on and then give it another 40-60 minutes with the lid off to evaporate off some of that water content so the *sauce* is thicker. Thrown a lit of grated cheese on the top of each serving and we're good to go.

Extra Gingery Bread

From all the absolutely glowing reviews I expected to like this cake more than I did. I'm an absolute ginger NUT so the prospect of three sources of that spicy delight was tantelizing. The thought that people decreased the oil and still found it to be moist was promising. I followed the recipe as written and it *was* good, but not the WOW experience I had hoped for. I glazed it (as suggested) with powdered sugar and juice (orange rather than lemon because I had just squeezed some oranges). Don't know what to do differently next time (yes, there *will* be a next time) but I'll fiddle around with it. THANK YOU for sharing the recipe and for all the reviewers comments!

Nany's Cheesy Cauliflower Casserole

This is a favorite but I changed it up some. First: I couldn't bring myself to use 1 cup of mayo so I use 1 cup fat-free cottage cheese. I use fat-free evap milk. Also, I tend to make this when I have leftover cornbread; this last time I melted 1/4 cup butter and mixed it with two 2x2 squares of cornbread as the topping. THANKS!

Black Bean and Salsa Soup

I use smoky peach salsa from Trader Joe's. Throw a quick cornbread in the convection oven, get this soup through the processor and slowly heated, and VOILA! Exceptionally good!
