Guyanese Lime Cookies

These are SO GOOD. I made a few batches with the sugar coating on top, and then got lazy and made some without. Let me tell you, the sugar on top is what really made them go from good to fantastic. PS I also fresh-grated my spices, and I also made sure not to leave any pith on the lime zest.

Orange Chocolate Chip Cookies

I used 1/2 cup brown sugar instead of one cup and they were still WAY too sweet. Also, they were soft (good) and kind of cakey (not so good), though I admit I may have overmixed the batter a little. If it weren't for the terrible sweetness, I think they would have been pretty good.

Red Chard and Caramelized Onions

I've got to say, I have a REALLY hard time eating leafy green things. I hate green salads; mainly eat greens either cooked or juiced. So when I give this recipe five stars, it's more like ten stars when adjusted for my extreme-anti disposition. I made it with these ingredients exactly. The only change I made was to slow-caramelize the onion (took 30-40 minutes). I'm not a huge olive, caper or salt lover, but man the sweet-bitter-salt-acid combo is PERFECT. This would be pretty average if you took out one of those elements, I do believe. I ate some by itself, and some spiced up w/ pepper flakes on a little chipotle tortilla with pepper jack. Both ways were marvelous.

Rhubarb Bread I

Super super super. By necessity, I'm off milk products at the moment, so I made this with unsweetened rice milk - though when I'm back on dairy, I think I'll try this recipe with buttermilk. Other minor changes: I omitted the topping just because I felt like it, used 1 1/2 c. whole wheat flour and 1 c. white, pecans instead of walnuts, and cooked it about 60 minutes. I think it would have been excellent with all whole wheat flour, and I would have definitely used applesauce instead of oil, had I had any applesauce or apples. Also, next time I think I'll experiment with agave or honey with a touch of molasses so as to scale back the refined sugars. Hah. After I make all the changes I want, if they work out, I'll post my own recipe :D
