Spinach Quiche

This recipe was awesome!! I made this for a potluck at work, first time making quiche, and people raved! Thanks to other reviewers who explained how to cut fat/calories. I only used 1/4 cup butter, 1/2 cup or Rice milk, and only sprinkled the cheddar cheese on top instead of adding it to the sauted veggies and it still turned out amazing! I also added zucchini and eggplant, and almost had enough for two quiches. Awesome recipe though! Thanks!

Summer Bean Salsa

Yummy! I made this for a company picnic and wished I could have kept it to myself! I made the original recipe, then thought it could use a bit more color so I added kidney beans pineapple chunks too and wow--even better! Next time I might throw in some strawberries and more cilantro for a bigger kick, but this is a tasty and beautiful salad!

Raw Hummus

WOW, just WOW! I've tried to make so many hummus recipes and while some had a good flavor, none of them had the right consistency...until this recipe! This makes the most perfectly smooth, creamy, delicious hummus. I'm not sure if I used extra large lemons on accident because mine had a VERY strong lemon flavor...but a few more garbanzo beans and some extra cloves of garlic and it was perfect!! Soaking the beans makes all the difference; way to go!!

Super Moist Pumpkin Bread

I made this bread last night and it's gone tonight...need I say more? This bread is addictively good and I love that there's no eggs or butter! This was my first time making this so I followed the recipe exactly--except that I didn't have coconut milk so I used soy milk instead--and it turned out fantastically! I definitely didn't need to bake it as long as this recipe said but even with over-baking this bread is still so moist! I can't wait to try it with applesauce instead of oil and a little less sugar. (EDIT) Ok I made it again, this time with 1 1/2 cups brown sugar, 1/2 of white sugar, left out the coconut and substituted apple sauce for the oil. It's still moist, but the applesauce made it a bit gummy so next time I won't substitute all of the oil.

Zucchini Brownies

Amazing! My boyfriend doesn't like Zucchini and he loved these! I'm glad I read the last few reviews before I made them because I honestly thought I was doing something wrong--the batter (if you can call it that) was SO dry I swore I missed something; but it's true that the zucchini moistens the batter during baking. Make sure to REALLY mix the batter, even though it's so dry, because mine had some salty/sweet spots, but I wouldn't add or change a thing about this recipe! Delicious and you don't feel so guilty because they're made with zucchini :)
