Chicken and Lentils

I give this 5 stars for being cheap, healthy and tasty. I did not have tomato sauce or lemon juice, but it was just fine without. As others suggested, I tossed everything in the crock pot for about 6 hours on high. I used chicken thighs so the meat was really tender and falling apart and the general consistency was almost like a stew. Served it over egg noodles to positive reviews from the entire family, toddler included. Thanks for an easy, healthy weeknight meal.

Easiest Turkey Loaf

I made this tonight and it was mostly a success. I made just a half recipe for 3 people and it was more than enough. I used less water than was called for on the boxed stuffing based on previous comments, and the loaf was very moist, but not mushy at all. It was very difficult to find boxed stuffing that did not have MSG and/or high fructose corn syrup, but other than that I have no complaints and will make this again.

Orcchiette Pasta with Broccoli Rabe and Sausage

This is delicious! I made it vegetarian by using veggie sausage, and used collards because that was all we had. Everyone at the table had multiple helpings, my five year-old included! I will definitely make this again.

Potato Chips

Wow! I was skeptical- like everyone else- but these really are tasty chips. It took about 8.5 minutes in my microwave for them to brown- and no problems with sticking to the plate. A bit labor intensive if you're looking to munch through a whole bag of chips, but an excellent and healthy snack! Thank you!

Simple Baked Apples

I made this with pears instead of apples because I had some leftover, and put several pats of butter on top just before baking. Delicious!!!! Served with crepes as a breakfast for dinner. This is a great way to use up extra fruit, or fruit that is nearing its prime. Thanks!

Vegetarian Gravy

I made this to smother cheese biscuits with on a really cold day and it really hit the spot! I did not find the soy taste to be overpowering, but I used Bragg's Liquid Aminos in place of regular soy sauce, anyway. I only give this four stars because the thickness is too much- I will certainly be making this again but with less flour/more broth. Great vegetarian gravy!

Lentil and Green Collard Soup

The flavor of this soup is wonderful! I sauteed the garlic and onion together out of habit, but otherwise followed the recipe exactly. Incredibly flavorful for having so few ingredients. I love salty food and this was a bit much for me, however. One tablespoon seems like an awful lot for this recipe. I will definitely reduce the salt next time.

I have never made biscuits before and these turned out perfectly for me following the recipe just as written. I have a way of messing up even the easiest recipe when it comes to baking- so it's quite amazing that these turned out so well. Thanks for the great recipe!

Linguine Pasta with Shrimp and Tomatoes

This is really tasty! I actually followed the recipe exactly. I've never put butter in tomato sauce before, but I guess that's how restaurants get it to taste so rich? The only modification I will make nest time is to up the amount of Cajun seasoning to make it a bit spicier. Very easy and delicious!

Butter Chickpea Curry

The spice combination in this dish is really fantastic. Like other reviewers, I substituted canned diced tomatoes and yogurt for the cream (I added a bit of vegetable broth to make up for the thickness of the yogurt). Even though I realized afterwards that I had goofed and used vanilla yogurt, the flavor was still excellent. Next time I make this I think I will add some greens and another can of tomatoes for more color and moisture. This is very easy and flavorful and my four year old dug right into it!

Creamy Celery Casserole

I had a ton of celery to get rid of, so I wanted to make this but I don't care for bell peppers or pimentos. I subbed some onion and used an 8 oz package of fresh baby portabellas. This recipe is very yummy! Flavorful and reminded me a little bit of stuffing because of the bread crumbs. A keeper!

Easy Tuna Casserole

I agree this is a good basic recipe, and because it is basic it leaves room for experimentation. In my case, I added a cup of frozen peas because I don't feel that it is a proper tuna casserole without them! I also increased the amount of tuna and noodles to two cans and 4 cups, respectively. Since I increased the dry ingredients I added 1/4 cup milk. I didn't have FF onions, so I made breadcrumbs with whole wheat bread, olive oil, and garlic powder. Very easy and tasty dish!

Carrot Burgers

This is a great recipe- easy, inexpensive, and nutritious. I sub bran flakes and omit the sugar. We like them without any hamburger bun at all, with a little cheddar cheese melted on top. Yum. These burgers have a surprisingly good texture and are not at all mealy, as some veggie burgers can be. I have served these to several meat eaters who absolutely loved them (asked for the recipe and everything)!

Easy Polenta with Tomato Sauce

This is a fantastic basic polenta recipe. I use vegetable stock to keep it vegetarian, but otherwise do everything else according to the instructions. I use this recipe everytime I make polenta- it's good as is, or jazzed up with mushrooms and extra cheeses. Yummy!!
