Easy Mexican Casserole

Spring Vegetable Soup

I loved this soup. I didn't have mushrooms or cabbage but used everything else. It is flexible enough that you can use whatever you have on hand. I also added some fresh grated parmesan cheese on top. Excellent. Even my carnevore husband who asked "just soup for dinner?" loved it and ate it for lunch the next day too. Must have been those chuncky egg noodles that hooked him.

Jordan Marsh Style Blueberry Muffins

I've been making these for years and they taste just like the original at the store. Although my recipe calls for 375 degrees the entire time and butter instead of shortening. I also might try updating it to make them a bit healthier: decreasing sugar, using apple sauce instead of butter, half whole weat flour.

Chicken Pot Pie IX

I made this as is and loved it. I was surprised at the amount of butter so next time I am going to try and cut the amount of butter in half and see how it goes. I also like this recipe because it does not use canned soup like so many other recipes.

Basil-Garlic Grilled Pork Chops

I made it as directed in recipe and we loved it! I would have also loved it with some fresh tomatoes from the garden earlier this summer - pico de galo would be great since it called for limes.

Fresh Tomato Salsa

OMG - used my big and jucy but split and sad looking tomatoes right from the garden and it was delicious. Best ever!! I only had red onion so used those. Great recipe, thanks! Oh yes, only used one serrano pepper without the seeds.

Peach Muffins

Loved it with healthy substitutions: whole wheat flour (3/4 c plus 2 T whole wheat flour = 1 cup white flour), sugar free applesauce instead of oil, only 1 cup of white sugar. I also prinkled cinnamon sugar on the top before baking. We went peach picking and used the best ever peaches from The Peach Tree in York, SC. Delicious!

Slow Cooker Lentil and Ham Soup

Very Good. I used an extra carrot and celery stick just because I like them. I could have added more. I also used reduced sodium broth but still thought it was a bit salty for me so I added a cup of water half way through cooking. I saved this one and will use again. Thanks so much.
