Spicy Black Bean Cakes

This recipe is great! I usually make it as it it written but, I have also used it as a stuffing for portobello mushroom caps. It was an awesome main entree. I made it totally vegan for friends by using silken tofu with a bit of extra lime juice for the sauce, matzo meal instead of traditional breads crumbs and oat flour for a binder. It didn't change the flavor one bit. It's a permanent fixture in my recipe box.

High Temperature Eye-of-Round Roast

UNBELIEVABLE!!!!! I have always cooked the cut of meat in the crock pot until it fell apart and used it for sandwiches. Never again! We have a small family. My roast was only 2.2 pounds. I cooked it at the 475F for 16 minutes. I shut the oven off and we went to the beach. 3 hours later, it was juicy, tender and a perfect medium. Who would have thought! Spent 15 minutes adding baked potatoes and a steamed veggie. What an easy delicious meal! Thanks.
