Currently abstaining from dairy, but will soon be eating goodies and drinking moo juice again :)I am not a vegetarian, but my significant other is, so I have a large repertoire of veggie recipes, with a few vegan.

My cooking triumphs
I created a wonderful lemon berry cake with mascarpone cheese frosting... it is by far my favorite original recipe.
My cooking tragedies
I make delicious cakes, but they are always so ugly... lop-sided, frosting sticks to everything except the cake, etc. I made a wonderful carrot cake, and thought I would experiment with multiple layers of different sizes. I tried so hard to level the tops of the layers before I stacked them, only to have wound up with the the leaning tower of carrot cake.

Slow Cooker Taco Soup
Delicious! Made two very small changes. I added a cup of chicken broth, and I used morningstar's vegetarian "beef" crumbles. Sooooo good!

THIS IS SUCH A GOOD RECIPE!!! Seriously, prepared it exactly as called for, probably went a little overboard on the salt... but it's awesome. I used Thai White Ribbed eggplant from my very own garden, and there is not even a little bitterness. I think that bitterness comes when you choose eggplant that is too ripe, they get kinda gross. Fresh, young picked eggplant is best.

Ma Bethie's Zucchini Bake
I have brought this to several family gatherings. Everyone peers at it cautiously and waits for someone else to dig into it. By the end of the day, there are no leftovers to take home! It is fail-proof, in my opinion. Decadent, but still a good way to sneak in veggies!
