Pumpkin Spice Bread

This bread smells fabulous when cooking. I use more pumpkin than the recipe called for (omitted the water) and used mayonnaise in place of the eggs and half the oil. I was afraid it wouldn't cook all the way, but an extra ten minutes and it came out lightly crisp on top and incredibly moist and flavourful inside. It's a dense bread, but with flavour and moisture instead of weight.

Warm Goat Cheese Sandwiches

Tastes great for such a simple sandwich. I used feta (I think that's goat cheese at least...) and added some halved fresh grape tomatoes. I have never really liked sundries tomatoes but they went well with the feta. It all worked together so nothing was too overpowering.

Basic Crepes

I had these for dinner tonight with salmon and spring greens. I'd only ever had them sweet before, but they were quite good in a savory dish as well. When I make them sweet I add a touch of vanilla extract and sugar to the mix, then stuff with fresh fruits.

Sesame Beef Stir-Fry

I found this recipe just a little disappointing. I followed the recipe almost exactly, halved it and subbed sugar snap peas for the water chestnuts and omitted the sesame seeds. It was a bit bland, but could be a good base.

Creamy Potato Leek Soup II

This was my first attempt at making soup (other than warming it straight from the can), and while the instructions are unclear, the soup itself was good enough for five stars. I used sliced red potatoes, just enough for the whole four cups of broth to cover. I replaced the bacon with ham and used low sodium ingredients. It has a delicious, mellow flavour and is more stew than soup. I served it with shredded cheddar and fresh pepper.
