Classic Goulash

This is a regular at our house. Since the kids love it so much, I always sneak in some frozen chopped spinach. Whatever you do, do NOT substitue Worcestershire for soy sauce. It is not the same! I often add a little extra soy and omit the salt. I also add a little sugar to cut the acidity of the tomato.

Chicken Enchiladas I

This was awesome! I think this is probably the 4th enchilada recipe I've tried and this one tastes most authentic. The only thing I did differently was omit the water and I sauteed the onion, garlic and green pepper first, but this is just to a personal taste. I read some reviewers used jared salsa!?!?! Blah! I find salsa in recipes to be watery and gross. Stick with the tomato sauce. I used leftover filling to make quesadillas--YUM. I think next time I will make extra filling and freeze it.

Absolute Best Pancake Syrup

I once went to an Amish restaurant for breakfast while at a conference in New Bern, NC. This is VERY close to their homemade syrup. Now I only need to replicate their homemade bread and french toast recipe!

Sassy Steak Marinade and Sauce

This was awesome! The only thing I did differently is baste the steaks with the marinade at the end of grilling because we didn't have time to let it sit 30 minutes. I cooked the sauce as directed but added onions. Next time I'll try marinating the steaks first. This is a keeper!

My Meatloaf

This meatloaf did was not good for me. I found it too salty and dry. I didn't watch it (my fault), and let it cook an hour. It was overdone.

Bananas Foster Belgian Waffles

For us, this recipe was way too sweet and the taste of rum/vanilla in the sauce was way too strong. If I could go back, I would cut the rum, vanilla and brown sugar in half. It is a little frustrating to go back and read the reviews only to discover that people made changes to the recipe, then gave their own recipe 5 stars.

Ground Beef Stroganoff

I prepared this as written, tasted it, and did not care for it. Definitley too much mayo. I also added about 7 or 8 "glugs" from a bottle of worchestershire sauce--I have never heard of a stroganoff without it. Also added a splash of soy sauce, which gave it more flavor and acted as a salty seasoning. I also added ground pepper. It was farily good after that, but my son didn't like it. Probably not a keeper for us, even with the modifications.
