Chutney Baked Brie

5+ stars. This recipe is amazing. Every time I make it, everyone always asks for the recipe. I usually use more curry powder, covering the entire wheel/wedge of brie, whole cashews and bake it a bit longer (~30min) so it's nice and gooey. Delicious. I usually serve this as an appetizer to 'Curried Honey Mustard Chicken' and 'Curried Pear, Cashew and Spinach Salad' -- two other great recipes from this site. Great meal.

Red Wine Pork

I made this recipe in the slowcooker and it was absolutely delicious, extremely flavorful. I added some rosemary, thyme, oregano, honey (instead of sugar), and a little bit of olive oil and balsamic vinegar. Poured it all over sliced mushrooms, carrots, onions, baby butterball potatoes, garlic, shallots and the pork -- cooked on low for about 7 hours (3-4 hours on high). Served with a side of parmesan polenta. Perfect!

Tortellini Salad with Grilled Tomato Vinaigrette

This was a great side for a hot summer night. It says to serve warm, but I let it sit in the fridge for an hour or two before dinner, letting the flavors really sink in. I also made the following changes: I halved the dressing recipe, but still used 2.5 tomatoes, I added sauteed mushrooms, used red, green and yellow peppers, I omitted the tomato paste and fresh spices because I was out and added red pepper flakes and lots of freshly ground pepper. Instead of grating the provolone, I cut up little cubes adding even more texture and flavor. I think you could add any a variety of vegetables to this recipe and the dressing could be used for a variety of things as well! I would make this recipe again. UPDATE: I made this once again cutting up cubes of provolone, but also added mozzarella balls and used herb paste. Once again, delicious.

Lemon Blueberry Drop Scones

I love this recipe. It's quick and simple. I add extra lemon extract because I love lemon and use a variety of berries because they all seem to go well with the lemon. I use about half whole wheat flour, and applesauce instead of the fat, as well and they still turn out great.

Grilled Fish Tacos with Chipotle-Lime Dressing

Absolutely delicious. I made a few changes though, for convenience: I sauteed the chunks of fish instead of grilling (only about 2 minutes per side, otherwise you'll overcook the fish), I used a broccoli slaw mix that had cabbage broccoli and carrot in it, worked great, and I added cilantro to the dressing, as well as a topping. Also, I omitted the adobo sauce because I didn't want to open a whole can of chipotle peppers. I heated the tortillas for a couple seconds in a frying pan as well. I served sauteed pineapple on the side. It was great and I will definitely make again--probably tomorrow!

Curried Honey Mustard Chicken

This recipe is excellent. I marinated the chicken in the same baking pan that I cooked it in, leaving extra sauce to mix with the brown rice I made for it. Delicious.

Curried Cashew, Pear, and Grape Salad

This recipe is great. I even got my mom to try and like something curried! I don't bother with the bacon and it is super easy to pack a container of the cashew spices, add a little butter, microwave and then shake it to coat the nuts. Easy, creative salad to bring for lunch at work.
