Apricot Muffins
These are delicious as listed. To make them a little healthier the next time I made them, I substituted applesauce for oil, added 1/2 tsp imitation vanilla extract (1/4 tsp real), and added 2 Tbsp flaxseed meal. Needed to add a little bit more butter milk so it would stir. Next time, I'm going to replace some of the flour with flaxseed meal, instead of adding. These were also delicious.

Quinoa with Peaches and Creamy Yogurt
This was very good. I cut the seasoning in half, because my kids don't always like a lot of cinnamon. I also liked mixing some honey into the quinoa itself. I used two of the snack packs of peaches in juice, since I needed to used them, and it was still really good.

Applesauce Doughnuts
I followed the recipe exactly, but baked the doughnuts. I cooked them at 375 degrees for 8 minutes. I won't cook them as long next time, they were a little dry compared to the description, but tasted great. My daughter also wanted to taste the apple, not all the spices, so I will cut back on those, even though I really liked them, and increase the amount of apple sauce so the apple flavor is what you taste and it's more moist since I'll definitely bake them again. I'll also sprinkle sugar on them next time.
