Pecan Pie V

This pie was delicious and very easy to make (the hardest part was waiting to eat it). I love that it's not made with corn syrup because it seems more natural and I generally have brown sugar on hand. One important note is that the pie has to chill for a long time to firm up. Two hours later it was still pretty liquid, it wasn't until it sat overnight that it was the proper consistency. This was my first pecan pie so I don't know if that's common sense to everyone else, but I was surprised, especially since no one mentioned it. I thought I'd ruined the pie until I googled it and realized it needed more time.

Baklava

I thought making Baklava was going to be an ordeal, but it was actually quite easy and delicious. Notes for next time: make the sauce an hour or more ahead of time so it can fully cool, layer more phyllo on the bottom (I like a flakier baklava), use maybe 1 1/2 pounds nuts since I only had enough for two layers of nuts and lastly, I think I'll cut (score) it before buttering the top layer so the phyllo doesn't tear as easily.

Beef Wellington

Great recipe. I omitted the pate, and instead used chopped mushrooms and onion sauteed and seasoned. Olive oil in place of butter. I also precooked the tenderloin for an extra ten minutes since I prefer my beef medium-well. An added plus was pre-marinating the meat for extra flavor. If you don't have a rack to cook it on, you can use a broiler pan instead to avoid sogginess, but be sure to spray it with a little Pam for easier removal.

Cracked Sugar Cookies I

Easy and delicious! I don't think I'll ever use another recipe for drop sugar cookies. Even with substituting baking powder and soda for the cream of tartar they were fantastic. I admit I was a little nervous when the dough came together so crumbly (think pie crust) but they turned out perfectly and disappeared quickly.

Cold Roasted Moroccan Spiced Salmon

Very tasty fish. I served it hot and didn't have any mustard-it was a tiny bit too sweet, so next time I'll use a pinch less cinnamon and sugar. My husband is Moroccan and he enjoyed it-and he's not much of a fan of fish.

White Chocolate Raspberry Cheesecake

Fantastic! The most time consuming part was making the raspberry sauce, I might use jam next time to see if it's worth the extra effort, although given the end result I would gladly do it again. Like suggested, I doubled the Oreo crust, I might 1 1/2 it next time, I also used slightly more white chocolate, as there were only a few chips left in the bag after measuring it out-I melted the chips in the microwave instead of using a double boiler. Will definitely make again

Dawn's Easy Red Velvet Sandwich Cookies

Delicious. As much as I hate it when people change everything and review anyway, I'm going to do it. I used chocolate cake mix with a dash of vanilla and made the icing as is-with food coloring, but without the coconut. They were fantastic and team colored for the Superbowl, my team lost, but the cookies were a huge hit-I'm so excited to try them with different mixes-and I think I've got a new go-to cream cheese icing recipe.

Bake Sale Lemon Bars

These were delicious. I made the recipe as written and didn't find them too sweet-although I think next time I might increase the lemon juice to 1/3 cup just for a smidge more tartness. Definitely much better than other recipes I've tried, and easy too-the crust was perfection.

Easy Granola Bars

I thought these were okay. I found them a little bland-maybe because I left out the chocolate chips? Maybe a little vanilla or extra cinnamon would help? My mom liked them and so did my 2 year old, but my husband and I didn't care for them much.

Naan

Great naan. Better than I've had in some restaurants, and not very difficult (other than the time spent waiting for rises). It's fairly straightforward and can be cooked in a heavy skillet with just a hint of oil. Please note that the naan it makes are pretty small (but oh so good) and you can flatten the dough balls by hand, saving time over rolling them out.

Best Toffee Ever - Super Easy

Delicious, very simple to make. Warning: a half batch makes a full 9 x 13 cookie sheet, so you'll have a lot of toffee on your hands with a full batch.

Buttercream Icing

This recipe is quick to make and delicious. I recommend using whole milk, I've done it with 2% and the icing with whole milk was much better. I also don't like my icing very fluffy, and if you don't either I suggest letting it sit after mixing it for about 1/2 hour before spreading on cupcakes (or whatever you're making).

Buffalo Chicken Dip

Delicious! I only used one package of cream cheese for a meatier dip and used a blend of mozzarella and cheddar-I also boiled and shredded 3 chicken breasts. Easy and delicious, I'm sure it would be just as tasty as written, I just prefer more chicken and less "dip"

Donut Muffins

Delicious! I used 1/2 tsp nutmeg instead of the full 3/4 tsp and thought they were absolutely perfect. Mine didn't puff up, but I don't care-they tasted fantastic. I did 1/2 in the cinnamon sugar and the other 1/2 in a glaze-both were awesome (if you glaze them, set them on wax paper so they don't stick and rip). Now I just have to go buy another mini muffin pan so I can double the recipe :)

Raspberry and Almond Shortbread Thumbprints

Easy and delicious! I followed the advice of the reviewer that says to stick the prepped cookies in the refrigerator for about a half hour-they came out lovely. I've tried them with vanilla and almond extracts and they both turned out well (although I personally prefer the vanilla). Awesome little cookies, and everyone thinks you're a genius.

Playgroup Granola Bars

Delicious, cookie-like granola bars. I subbed in 1/3 cup whole wheat flour for the all purpose to make it healthier but other than that I didn't make any changes. I'm looking forward to trying other dried fruits in place of the raisins and maybe adding some seeds or nuts.

Irene's Barbeque Sauce

Great sauce. I didn't have any Worcheshire sauce, so I threw in a dash of A1 instead. It had a little more bite than I'd like, so I added a couple tablespoons of applesauce and the result was perfection. I'll definitely double (or triple) the recipe in the future so I can apply it more liberally. I slow cooked a brisket in diluted sauce then topped with more sauce and it was amazing. Can't wait to barbeque with it.

Chocolate Fudge Buttercream Frosting

Good frosting. I thought it was better when I tasted it before adding the hot fudge topping, next time I think I will stop at this point for a richer, fudgier taste. Still very good frosting.
