Ham and Cheese Pasta Casserole

I thought this recipe lacked something to bind it together, like a cream of something soup. Also, the cubed cheddar cheese melts unevenly and because there are bread crumbs on top you are unable to stir it to redistribute. The package of macaroni I used was just over 12 oz...any more than that would've been too much. I added some Knorr Garlic Pasta mix (if I had Ranch dressing mix I would've used that) to give it some flavor. My husband originally thought the bread crumbs on top was Parmesan cheese, which I thought was a good idea. My picky 15 year old son liked it and everyone said it was good and ate it, but it just wasn't great. I would try it again with some tweaking.

Blackberry Cobbler

I followed the directions for using all purpose flour (1 TB baking powder 1 1/2 tsp salt, sifted with the flour). I put it in a smaller pan so it ended up with a lot of cake on top. It was delicious warm with vanilla ice cream on top. My whole family loved it!

Sweet-and-Sour Meatballs

Delicious! All 3 kids loved it and barely said a word all through dinner. I did use beef broth because that is what I had on hand and reduced the vinegar to 1/4 cup as suggested. I think that is the perfect amount. Sadly, I did not have any green pepper but I was the only one who missed it. It did seem that the meat/bread crumb mixture was rather dry compared to other meatball recipes but this is probably why the meatballs browned so well. This will go into our regular rotation.

Chicken and Corn Chowder

I'm rating this as AWESOME! The only thing I did differently was cook up an extra piece of bacon and then crumble two pieces in the chowder. The four of us had one piece to crumble on our bowl (sourdough bread bowls of course)! I used skim milk and it was plenty thick and creamy. I happened to have a bag of shredded triple cheddar which I think I will always put in this recipe. Great tip about the yellow pepper although my picky 12 year old still saw it. I think using white pepper would be helpful for those picky eaters too.

Mock Filets

My family loved this! One mock filet was not enough for my 9 and 12 year old because they loved it so much. I adjusted the bread crumbs to 2/3 cup and pre broiled the bacon (lightly) as suggested. I also use egg substitute to lighten the recipe a little.

Easy Cheese Ball II

This was an easy recipe and a big hit at the Christmas party we went to. I made it into two balls and rolled one in chopped pecans and the other in real bacon bits. They were both really good. I think next time I might try mixing the bacon bits into the cheese ball and rolling it in the pecans to get the best of both worlds! And it does taste better the next day as suggested by many people. This is something I'll make again.

Holiday Coffee Cake

Not gross! This turned out great in my opinion. Soft and moist and flavorful. A couple of things I did differently: I doubled the amount of topping. For an 11x17 pan the amount of topping in the recipe didn't come close to covering the top. I used walnuts because it's what I had on hand. Also, I think the cooking time is way too much. I checked it at 30 minutes and it was done, in fact the bottom was starting to get a little too brown so I probably could have pulled it out a few minutes sooner. Next time I make this I will start checking at 25 minutes It should be golden brown around the edges and a toothpick should come out clean in the middle. Definitely will make again!

Slow Cooker Stuffing

I just finished making this and tasted it - awesome! The flavor was so good. In the past the stuffings I've made have been bland. I used two 10 oz boxes of stuffing - they say it's 16 cups. I made giblet stuffing so I boiled the giblets and chopped them up and used the liquid for the broth, it was about 4 cups. I added the entire amount because it was just moist and I used the paper towel trick. I remove the paper towel just before I turned the crockpot to warm because it might start to dry out. My 8 year old daughter tasted it and said she was in heaven.

Turkey Potato Tetrazzini

I used ground turkey for this recipe and browned it with onion and garlic. My family loved it. I messed up the layers so I ended up stirring it halfway through and it turned out great. I think it would also taste great with chunks of ham. I will make this again!
