Vegetarian Sloppy Joes

This was brilliant. Since other reviewers thought it needed more tomato sauce, I started with a big can and kept adding sauce until it tasted the way I wanted it to.

Estrellita Salad

I'm rating this while I still have the taste in my mouth. This was awesome. I'm not a huge fan of olives, but they weren't overpowering in this, and I think they gave it a necessary strong taste to pull the salad together. I do NOT recommend adding chips right to the bowl. Just serve them on the side. I kept telling my boyfriend to eat it with chips, but he thought it was good enough to eat without them. Very easy. Did not look as messy as anticipated. I also did not measure the Catalina; I just added it, little by little, and stopped when it tasted how I wanted it to.

Lite Brocamole

Surprisingly really good. Great idea. I did NOT use a whole head of broccoli. More like half. The hard part was chopping up the steamed broccoli because I didn't use a food processor.

Fried Green Tomatillos

I followed other reviewer's suggestions and used flour. They were actually pretty good. Made a pepper jelly-lime sauce for dipping, which really, REALLY helped them out.

Lemon Cream Pasta with Chicken

Four stars because the recipe has no color. Some mushrooms, tomatoes, peppers, artichokes, etc, make it fresher and more delicious. It was not as lemony as I expected--still lemony, but I expected an overload. Of course, you could always grate more zest.

Fresh Pineapple Upside Down Cake

I made this for my dad's birthday, and he thought it was incredible. Really thick and moist, and the top is gooey. It wasn't the prettiest cake in the world, but I didn't expect it to be.

Ham with Honey and Brown Sugar Glaze

I was surprised at how good it looked and tasted. I basted it often, and I didn't put pineapple on top. I stuck cloves in the top into the spiral slits, and it looked wonderful and kept the slices held apart so that the glaze went inside as I basted it.

Chicken Wilson

This was very good. I expected some gravy/sauce to develop from the wine and chicken/mushroom juices while it baked and was a little surprised when it didn't, but the chicken was moist, and the dish was still delicious.
