Cinnamon Raisin Bread I

I've never made cinnamon raisin bread before and this was a huge success! On the advice of other reviewers, I added extra cinnamon to the sugar and set my oven timer for 30 minutes instead of 45. The recipe doesn't indicate the first rising time, but I gave it an hour. I will definitely make this again.

Tuna Noodle Casserole from Scratch

I really liked this recipe. I haven't had tuna casserole in a long time, and when I came across this recipe I decided to try it. This is a tasty casserole and the only thing I changed was to cut down on some of the butter.

Lemon Zucchini Bread

I would actually give this recipe only two stars if it weren't for my boyfriend who is really enjoying the loaf. For me, it was too heavy on the oil and not enough sweetness or lemon. But that's just my taste. The loaf turned out well according to recipe, it's just not for me!

Balsamic Glazed Carrots

Excellent! I cut regular sized carrots down to baby carrot proportions and it worked just as well. I've never sauteed carrots before, only boiled and/or mashed, so this recipe was a welcome change. Won rave reviews from everyone I served it to!

Baked Spaghetti Squash Lasagna Style

I made a bunch of additions to this recipe just to get rid of some veggies in my fridge, and it turned out great. I added yellow zucchini, portobello mushrooms and feta cheese on top of the mozzarella. It turned out really well and I'll make this again!

Potato Leek Soup I

AMAZING soup! I agree with some reviewers that 6 cups is not enough broth. I ended up adding 8 cups, and still needing to thin it out with a bit of milk when serving. Other than that, I absolutely loved this soup! The taste of the leeks sauteed with white wine and butter was great with the potatoes. I will definitely make this again and again... although not for a while since it made a ton of soup, which is now in my freezer.

Mushroom Pork Chops

Low Fat Full Flavor Cream of Broccoli Soup

This soup turned out absolutely amazing!!! It was super easy and tasty to boot! I will definitely make this again. The one and only change I made was using fresh cilantro. I will never buy canned soup again!

Cinnamon-Raisin Granola

An excellent basic granola recipe. Naturally I made some substitutions and additions, namely pureed prunes for the majority of the oil. I included 2 Tbsp coconut oil, a cup of ground flax (omegas and fibre) and a cup of rinsed quinoa (for the crunch). I will be making this over and over again for my morning yoghurt!

Slow Cooker Lentil and Ham Soup

This is an excellent stew! Hearty, tasty and filling. I used cooked ham, and I think the stew was a bit on the salty side because of it. Next time I will try to find a pork hock as suggested.

Amazing Whole Wheat Pizza Crust

I love to make pizzas at home, and usually I buy pre-made crusts... from now on I will be making this crust instead! It was a bit of work, but the crust turned out perfectly thin and crispy. I oiled the pizza pans and dusted them with ground flax to prevent the dough from sticking. I also used a tsp of honey rather than white sugar. My boyfriend and I are huge pizza fans, and he raved about this crust so much, that I made another batch the very next day to freeze and have on hand. Excellent recipe!

Healthy Garden Salad

Healthy Banana Cookies

I would give these cookies only 3 stars if they weren't so darn healthy! I had no dates so I used prunes. I also substituted some peanut butter for most of the oil and added cinnamon and nutmeg. Overall they were just ok, but I liked that they used up my overripe bananas and satisfied a craving for baked goods without being full of sugar. That being said, I will probably make these again, maybe adding some nuts for crunch.

Big Soft Ginger Cookies

These really are the perfect ginger cookies. I love the taste of gingersnaps, but I prefer the softness of these cookies. I always get tons of compliments and requests to pass on this recipe. I make these every fall because the smell reminds me of Thanksgiving and Christmas.

Spiced Slow Cooker Applesauce

10 Stars! This was amazing! I used 3 different kinds of sweet apples, so I left out the sugar entirely. I mixed cinnamon and nutmeg into a 1/4 cup of water and threw that in right at the beginning. Woke up this morning to the smell of warm apple pie... I put a few spoonfuls over my oatmeal at breakfast and it was heaven!
