Sweet Coconut Rice

Amazing! My boyfriend made this last night with caramelized baked chicken (another wonderful recipe on here). It went perfect with it! I loved the sweetness of this rice. It is the right amount of sweet. Delicious!

Absolutely amazing!! My boyfriend made this last night with a side of sweet coconut rice and it was perfect. He used drumsticks instead of wings. The whole family gobbled it up!

Breaded Parmesan Chicken

I recommend doubling the stuffing mixture as the one is not enough. I liked the flavors, savory enough, however I found a little something was missing but I can't quite put my finger on it. My boyfriend and son ate it up and loved it so I was happy about that!

Pumpkin Ginger Cupcakes

Shrimp Linguine

I was really craving a pasta dish with shrimp, so I decided to try this recipe. I would definitely recommend doubling the sauce which I did because otherwise I think it would have been too dry. I also added mushrooms. Pretty good and my fam gobbled it up!

Country Green Beans

These were wonderful! Just needed another side dish (in addition to my rosemary potatoes) to go with my ribeye dinner. I didn't have any ham on hand, but they were terrific without it! Next time I will try it with the ham or bacon. Also I used chicken stock instead of water. I sauteed the chopped onions with the butter a little bit before adding all the other ingredients. So yummy, they were gone in a jiffy!

California Salad Bowl

I liked this, altho I will be making a few modifications next time. Although the dressing was very good, it was a bit too oily. I will cut down on that next time. Also keep in mind, do not add the crumbled corn chips until ready to serve because mine got very soggy as it sat around for a half hour or so!! Soggy chips are not so good. Use fresh tomatoes as I used a can of diced tomatoes which added to the overall sogginess. I also will be using sliced ripe black olives next time as the green olives made it too salty. I did not use hot pepper sauce, I threw in a serrano pepper into the blender and it was just right. Lastly, I will be adding a few more ingredients next time. Grilled chicken breast (shredded); black beans; and corn kernels. Can't wait to try again!

Oh my. This is DELISH!!! :) I loved every bite. I would recommend doubling the recipe because this was just barely enough for 3 people. I will be doing that next time. I'm a fan of leftovers.

The Best Meatloaf

A new and delicious take on meatloaf! I used 2 lbs of meat tho, and 2 eggs instead of 1. For the bread crumbs I just crushed up some croutons. Next time I will use a little less salt. Nonetheless, this is an awesome meatloaf that I plan on making for years to come!

Teena's Spicy Pesto Chicken and Pasta

This was awesome! Very quick to make and very tasty too. I used Srirachi sauce and it was perfect for the adults. A little too spicy for my son tho, so if you have kids you might want to use a little less than called for. Toasted some garlic bread in the oven and it made for a delicious meal!

Simple Turkey Chili

This chilli is heavenly! It was perfect; I did leave out the water because I like my chilli a little thick. There were juices from the cooked turkey already so it really doesn't need those 2 cups of water. This really hit the spot and my "Buttery Corn Bread" (another great recipe on here) went perfect with this!

Buttery Corn Bread

So light and fluffly, best corn bread ever. I only used 2 cups of flour; and a little more cornmeal than called for - about 1 1/3 cups. In the oven for 24 minutes. Delightful and buttery!! Went great with my "Simple Turkey Chilli" (another great recipe on here)!

Chicken with Tomatillos and Poblanos

Very good! The roasting peppers smelled delicious in my house. I roasted my peppers on a griddle, for about 25 minutes. After they were nice and black and blistery, I put them inside a plastic bag for 10 minutes. The steam that's created helps make the skin easier to peel off. I still had a little trouble getting all the skin off the poblano peppers, but who cares? Another thing, I only had 1 Anaheim pepper and no tomatillos, but who cares? It still tasted great with a nice serving of some Spanish rice on the side!

Delicioso! Tasted just like my mama's! I toasted my bolillos in the oven for a few minutes. For my pinto beans, I bought a can and threw em in a pan with a splash of oil and half an onion, sliced. Heated them up, then mashed em. Slathered all the ingredients onto my bolillos. Folks this is key: slather. Don't be cheap. I like my Queso Fresco thinly sliced instead of crumbled but that's just me. I also really like the Daisy brand sour cream. (Sour cream is a staple in Mexican dishes so I have tasted quite a few brands). Another thing is get a nice head of lettuce, it taste so much better with big, fresh whole leaves instead of the pre-packaged thinly shredded flimsy stuff. I left out the cilantro and tomatoes. These tortas are the bomb folks.

Chicken and Bacon Shish Kabobs

So tasty! I followed the recipe exactly as written, with the addition of cherry tomatoes. I also used fresh pineapple instead of the canned stuff and I really think that made a difference. I grilled them on the gas grill on high at first but they started burning so I turned it on low and closed the lid to allow them to bake. 20 minutes later and our mouths were salivating! The bacon and pineapple are the stars of this meal!! Goodness gracious. We were in shish kabob heaven.

Mexican Shrimp Cocktail

Magnificent! The flavors and taste of this exquisite Mexican dish will take your breath away! I grew up eating Mexican food all my life and my mother would make this a few times a year. It was a delicacy. This here recipe is almost an exact replica of my mom's with a few minor adjustments. I left out the horseradish and hot sauce, it is flavorful enough without these additions. Also, since we are a small family, I only used 1 lb. of shrimp and 1 cup of Clamato juice. Kept everything else the same although I was very genourous with the cilantro because we love that stuff! Refridgerated for about 4 hours and frosted some pretty glasses in the freezer for a few hours. Served it up with saltines and sliced limes. It was gone in no time at all! Divine!

Hudson's Baked Tilapia with Dill Sauce

Excellent! I did not change a thing and this dish was exceptionally good, especially with the refreshing dill sauce. I was very generous with the cajun seasoning, and it came out very tasty. My son who is not particularly fond of fish, loved it, he even asked for seconds. I served this dish with "California Cole Slaw" and some leftover pasta salad. It was a perfect 10!

California Coleslaw

Superb! I was making "Hudson's Baked Tilapia with Dill Sauce" and needed a side dish or two...something refreshing. This recipe fit the bill perfectly! I cheated a little and bought a 1 lb. bag of prepared coleslaw (already had shredded carrots in it) and I chopped up the rest of the veggies myself. For the marinade, I mixed all the ingredients in a separate cup and then poured it into the salad bowl with the veggies and tossed the salad making sure everything was nice and wet. I refrigerated it for about 4 hours. It went excellent with the fish! A very refreshing and tasty coleslaw! I will be making this a lot in the upcoming summer months.

Orange Smoothie

Awesome tasting smoothie! I added vanilla ice cream (about 5 big scoops of it) and a lot more ice to get it to the consistency I like (thick). This was a huge hit! I topped it off with whipped cream and it looked and tasted great!
