Cranberry Eggnog Cornbread Scones

I halved the recipe and used corn muffin mix, rather than just cornmeal. These were simple to make (once I got past rubbing in the butter. I'm a bit of a novice at pastries.) and turned out wonderfully. The flavor is light, they're not too dry and certainly not tough. Will make again. Thank you for sharing.

Easiest Peanut Butter Fudge

I've made this recipe for the last two years, both times with the change to the sugar (2 cups brown, 3 cups powdered and 1 cup peanut butter). It's been a favorite both years.

Cashew Crusted Chicken

This recipe has a nice combination of flavors and lends itself pretty well to tweaking when it comes to ratios. I've made it about 5-6 times and never been disappointed. The first time, I followed the recipe to a T and was bothered by rolling the chicken in the cashews. By the third chicken breast, the cashews were covered in apricot mixture and they just wouldn't stick anymore. So, my modifications to the recipe. I use about 10 or so ounces of apricot and 1/3 cup spicy brown mustard. For the chicken, I have done it whole with the cashews sprinkled on top as well as cubed in the mixture and cooked on the stove. When cubed, I put the chicken over white rice and sprinkle with the cashews after toasting them in the oven for a few minutes.

Best Big, Fat, Chewy Chocolate Chip Cookie

I've made this recipe twice. Both times, I've reduced the white sugar by about an eighth of a cup. They're delicious but contain a few too many chocolate chips for my tastes. The second time, I reduced the chocolate chips to about a cup and a half and they were perfect.

Easy Key Lime Pie I

This recipe is the closest to the one I use. The modifications to this one are to reduce the egg yolks to 3. Reduce the temperature to 350 and bake time to 10 minutes. I make my own graham cracker crust and beat the whipping cream with a tiny bit of sugar to top it. Comes out perfect every time.

Banana Banana Bread

I made this recipe (as written) for my coworkers and they loved it. This is a very dense bread with a lot of banana flavor. The only thing we all agreed on that should be changed is the lack of nuts. Walnuts would be heavenly in this bread and bump it from a 4 star recipe to a 5 star.
