First attempt at Jerk chicken and fabulous results !! I added about six cloves of garlic and used two jalapeno peppers (my girlfriend and I like heat in our food). I broiled the chicken for about 10 minutes per side on the second lowest rack of my oven. The chicken was cooked to perfection and was very juicy and flavorful. During preparation I realized that I would have some left over marinade so I saved some for later use. A few minutes before the chicken was done I stir fried some shrimps in a skillet with butter, garlic and hot pepper flakes. About 2 min into the cooking I added 3 tablespoon of the left over marinate to the skillet (enough to coat the shrimps) and cooked until done, stirring often. The sugar in the marinade caramelized over the shrimps and added a fantastic complementary flavor (and some heat!). Chicken and seafood is one of my favorite combo and I`m very glad that I found this recipe and can`t wait to try it with other seafood (I think that it would be awesome with scallops). Many thanks !!
