Spicy Bean Salsa

I altered the recipe as per others suggestions so, it was difficult to give this a totally accurate rating. The bones are there so I'd say this is a solid 4 - 4.5 but, I decided to use fresh ingredients because I had them on hand. I substituted fresh white corn and instead of using the bottled italian salad dressing I used fresh garlic, lime juice, cilantro, salt, chipotle powder and olive oil to dress the salsa. I actually used this to make a southwestern grilled chicken salad. Very yummy!

Hoisin-Ginger Beef Skewers

I marinated the beef for 7 hours and it came out perfect! Extremely favorful and tender. As per my families preference, I used 2 cloves of garlic and 1-1/2 tsp ginger but other than that I followed the recipe exactly. Will definately make again!

Slow Cooker Italian Beef for Sandwiches

I made this for my family's 4th of July celebration and everyone loved it! All my relatives on my dad's side of the family live on the north side of Chicago (go Cubbies) and I was born and raised in a nearby suburb. I live in the northeast now and haven't had a good italian beef sandwich since we left Chicago... until now. This recipe is the real deal... even my dad was impressed! I took the advice of others and substituted beef stock for the water and used 2 packets of italian seasoning instead of 1. I also didn't have any dried basil so I subtituted fresh. The meat came out very tender and the auju was very flavorful with the perfect amount of saltiness. I will definately make this again.

Pineapple Banana Bread

The pinapple sounded interesting so I thought I'd give it a try. My family liked this recipe but, it didn't "Wow" them.. The recipe does seem to call for a lot of sugar. I'll probably stick with my existing banana bread recipe.

Creamy Pear Pie

The pie was just "okay". The creamy texture from the sour cream was very nice. The almond flavor really came through but I could not taste the lemon. The topping was very good. Overall there was still something missing for me. If I make again, next time I will add more sugar, add cinnamon and double the topping.

Delicious Ham and Potato Soup

Excellent!!! This makes a great cream base for a variety of soups (sausage and kale, clam or corn chowder). For the original recipe I made adjustments for ingredients I had on hand. I used 32 oz of chicken broth instead of the water and bouillon and omitted the salt (the salt from the chicken broth was just enough). I also used heavy cream instead of milk, added fresh thyme and finished it off with a little sherry (2 - 3 TBSP). Next time I think I will double the ham and add a few more potatoes. Serve with freshly grated Parmesan and a rustic bread. This one's a keeper!

Caramel Frosting IV

I didn't care for the frosting. It is way too heavy, grainy and sugary for my taste however, the caramel sauce is divine! It was smooth, buttery and the perfect consistency to drizzle over ice cream or a slice of warm apple pie. I'll make the sauce again but not the frosting

Perfect Sesame Chicken

Sooooooo good! I didn't have any low-sodium or dark soy sauce so, I substituted regular soy sauce for both and it still came out wonderful. The chicken was moist and flavorful. Even though the chicken was crispy it did seem to get soggy rather fast... I'm glad I served the sauce on the side instead of pouring it over all the chicken. And speaking of the sauce... Wow this recipe made a lot. I cooked approx. 2 lbs of chicken and made chicken fried rice to go along with the dish and still had plenty of sauce left over. Next time I will only make half the sauce recipe. The only other change I made to the sauce was to use 3/4 cup brown sugar instead of white, rice wine vinegar instead of distilled white and added a few drops of red food coloring to enhance the presentation. For my palate, the 2 TBSP of sesame oil was a bit overpowering... just a personal preference but, next time I will use only 1 TBSP. Oh yes... there will definately be a next time!

Banana Bars

The cake recipe was very good but, the frosting was just too heavy and sweet for me. The banana flavor really came through. As suggested by others, I added an egg and used cake flour instead of all purpose. I will make again with a different frosting

Onion Shortcake

This wasn't what I expected. It was more like a casserole side dish than a bread. The topping set up slightly but was still a little runny when cut and served so, you definately need a fork. The flavor was really nice... the onion really came through and went well with the sour cream and cheddar. Will probably make again.

Tortellini Pesto Salad

This was very good. My family does not like olives so, I omitted them and slightly cut down on the milk to make a thicker dressing. I just wanted a pure pasta salad so I did not add the spinach but I'm sure it would taste fine with it. The only other thing I did was to add 6 slices of crisp crumbled bacon... very yummy!

Brisket with BBQ Sauce

Wonderful!! Made this for a family picnic and everyone loved it! As one of my guest said "It just melts in your mouth". It was so tender and the smokey BBQ flavor was spot on. I ran out of mustard powder so, I substituted prepared Dijon. Other than that I followed the recipe exactly. Will definately make again.

Peach Cobbler VI

This had good flavor - took suggestions from others and added cinnamon to the batter. Texture wise it still seemed to be missing something... maybe a little too doughy which could have been due to my adjustment. I wanted a thicker cobbler so I made 1 1/2 times the recipe but still put in a 9x13 pan. It took forever to cook maybe 45 minutes longer but seemed to be set (I tented the pan with foil so the top would not brown too much. I will probably try this again but just make the standard recipe to see if the texture improves.

Zuppa Toscana

A family favorite... have made this many times. We like our soup a little thicker so, I add a little cornstarch roux and extra potatos. One time I was out of regular bacon and substituted turkey bacon. I would not recommend doing this unless you are in a pinch. The flavor was still there but I did not care for the texture. The bacon was just too chewy.

Asparagus Roll-Ups

A real crowd pleaser! I made two versions, one with wheat bread and bacon and a white bread vegetarian with goat cheese, roasted garlic and chive. I like the wheat bread better than white. Next time I think I will try a bleu cheese and pear combination
