Sweet Potato Pie I
Made the pie according to the directions plus added two tablespoons cornstarch to help it set. Delicious. Made it a second time adjusting the ingredients to fit the dietary concerns of my kids. Made it gluten free, egg free, and dairy free by using a homemade gluten free crust, replaced butter with Best Life Buttery Sticks, used rice milk, and used Egg Replacer for the eggs. Wonderful again and my boys devoured it!!!!

Chocolate Covered Strawberries
These are sooooo good and the recipe is easy. I made these for our Mother's Day Tea for church yesterday and they got rave reviews. I used a double boiler but only used 1/2 Tbsp shortening. I took the advice of some of the readers here and also dressed them up by drizzling melted white chocolate on each - a much fancier look, perfect for the tea. Another tip - after dipping in the milk chocolate, you can dip the tip of each strawberry in finely chopped pecans or walnuts for those who love nuts. Also make sure you allow the strawberries to thoroughly dry after washing them and don't allow water to get into the melted chocolate. I made some more to give to my mother in law for Mother's Day - she is going to love these. If you have any melted chocolate left over, instead of throwing it away, you can make little candies by placing a little in small paper liners and allow to harden. Top with the white chocolate and sprinkle with nuts if used.
