1-Dish Taco Bake

My family loved this meal. I was in a rush when I cooked it so I left a couple things out. I didn't put the taco seasoning in the ground beef, and I forgot the egg in the batter. It was still delicious and hearty! Will be making this dish again and again (with all ingredients)

Pork Medallions

Homemade Butter

This was my first time making homemade butter and it was super simple. It tastes wonderful. I experimented a little. I used my mixer to make it, and my Magic Bullet. Both do equally as good a job, but the Magic Bullet is a lot of work. FYI, a little salt goes a long way, I used the 1/4 tsp that this recipe called for, and it seems like it was a little much.

Mozechilli Casserole

Yum! My family really liked this recipe. I did a bit of tweaking it, though. I used pepper-jack and mozzarella for the middle layers, and mozzarella and cheddar for the top. I am sure I used about 4 cups of cheese, as we love cheese in my house. I spruced up my spaghetti sauce with garlic, black pepper, and italian seasonings. Even my super picky almost 2 year old liked it.

Pineapple Chicken

This was an instant hit with my picky husband. I made just a few changes to it as I went. I used one package of onion soup mix, instead of water i used the pineapple juice, I left out the orange, and I used 2 tbs olive oil. I added some shredded coconut, 1 tbs sugar, and sprinkled in a little Minute Rice. The coconut and the rice soaked in the flavor and was surprisingly delicious. Will make this one over and over again!

Parmesan Sage Pork Chops

This recipe made very flavorful chops. I didn't have lemon or sage, so I used italian seasoning and I baked it. My husband likes it, and he isn't a fan of pork. This one is a keeper.

Old Fashioned Potato Salad

This was an awesome pototo salad. I did cut the down to 1/3 cup celery and added more salt and onion, and as others suggested more mayo. the recipe did not specify the size of the potato, so I just used 4 large russets. I will try it with dill relish next time to give this dish a less sweet taste, as suggested by a guest. I love it, but I was the only one raving about it.

Cream Cheese Chicken

This is now one of my favorite chicken recipes. I didn't have any mushrooms so i subbed with broccoli and threw in a little parsley and chopped green pepper. I drizzled the extra Dijon brown sugar mix over the walnuts and sprinkled the chicken with shredded Parmesan cheese. All the different flavors pop out, I LOVE IT!
