Mozechilli Casserole
Yum! My family really liked this recipe. I did a bit of tweaking it, though. I used pepper-jack and mozzarella for the middle layers, and mozzarella and cheddar for the top. I am sure I used about 4 cups of cheese, as we love cheese in my house. I spruced up my spaghetti sauce with garlic, black pepper, and italian seasonings. Even my super picky almost 2 year old liked it.

Old Fashioned Potato Salad
This was an awesome pototo salad. I did cut the down to 1/3 cup celery and added more salt and onion, and as others suggested more mayo. the recipe did not specify the size of the potato, so I just used 4 large russets. I will try it with dill relish next time to give this dish a less sweet taste, as suggested by a guest. I love it, but I was the only one raving about it.

Pineapple Chicken
This was an instant hit with my picky husband. I made just a few changes to it as I went. I used one package of onion soup mix, instead of water i used the pineapple juice, I left out the orange, and I used 2 tbs olive oil. I added some shredded coconut, 1 tbs sugar, and sprinkled in a little Minute Rice. The coconut and the rice soaked in the flavor and was surprisingly delicious. Will make this one over and over again!
