White Chocolate Blondies

Honestly, they were just okay at best. As easy to prepare as they were, I still wish I hadn't wasted my money on good quality white chocolate just for this. Overpoweringly sweet.

Chocolate Macaroons I

An absolute favorite of friends and family, even the ones who "don't like coconut" or "don't like macaroons". They are definitely very sweet, but we seem to like that over here :)

Fruity Curry Chicken Salad

I don't quite understand all the hype. Yes, this is a decent chicken salad. Is it the BEST chicken salad? No, probably not. I like curry, and I love grapes, so I was expecting a little better after seeing all the positive reviews. There is also a lot of prep involved, and I'm just not sure it's worth the effort.

Chicken Enchiladas II

Taste=3 1/2 stars, easiness=4 stars. I cooked and cut the chicken the night before, to save time. These are pretty good and perfect for a busy night. Tip: use whole wheat tortillas and "healthy request" or "low sodium" Campbell's cream of mushroom soup.

Blonde Brownies I

While in the process of making these, my boyfriend insisted he would not be having any (he saw how much sugar and butter went into them). Later, he ate half the tray. These are quite good, and very moist. I couldn't tell you how well they hold up over time, because I made them yesterday and they are gone already! I mixed half the chocolate chips into the batter, and put the other half on top. I think they could have benefited from a little something extra, like almond extract or maple flavor, but other than that are very good.

Chocolate Chocolate Chip Cookies II

I've made these several times for my friends, family, and myself. Everyone who tries one wants another! I often use 1 cup of semisweet chocolate chips and 1 cup of either white chips, chopped andes candies, or peanut butter chips. I think they turn out best when the dough sits in the refrigerator for a little while.
