Rubbed and Grilled Pork Loin

Wonderful! The instructions in this recipe made it easy for me. I used a gas grill and warmed it up on high heat, then reduced burners to low and browned the roast as indicated in the recipe. It took 25 min. to brown all over, then moved to indirect heat and turned burners on med. Covered, the grill came to 450 and I grilled for about 1 hr. When the meat therm. registered 140, I removed the roast and wrapped tightly in foil. I sat it in a styrofoam cooler for 1/2 hr. and when we cut into it - that roast was melt-in-your-mouth perfection. The crust was so good and the meat was tender and tasty to the center! The whole family raved. Thank you for sharing this recipe!

Garlic Spinach

Such a simple, yet elegant side dish. My 12 year old and I really enjoyed this recipe. She doesn't love garlic, but it didn't seem to overwhelm in this recipe. I think it was the lemon juice that gave it a perfect balance. Tangy and delicious! We used the baby spinach in a large plastic container (from a discount club).

Fudge

I am notorious for ruining fudge. Well, I was skeptical about this easy recipe. BUT...yay! I followed it exactly and it worked just fine. I was a little worried when I took the mixture out of the microwave at 3:00. I could see the liquid pooling inside, but after I gently mixed it, it blended great! It was easy to pour into the foil lined baking dish and I didn't burn my fingers on the big pot like I always do! Thanks for the recipe.

Best Tuna Casserole

Great casserole. My family loves this - even though they thought they would hate it! The only thing I did different, was add 1 c. mayonnaise to help the moisture.

Chicken Salad

This was fantastic chicken salad. The amount of grapes and water chestnuts gives this chicken salad a lot of personality. The flavors meld perfectly and it is sooo good by itself that you almost don't want to put it on bread. I had a hard time not overeating with this recipe! Thank you!

BBQ Country Style Ribs

I made this recipe just as it is written and LOVED them. I wasn't sure what the lemon would do to the ribs, but it was subtle and wonderful! I use Sweet Baby Rays sauce. I would like to try to finish these on the grill sometime. They are just as tender as I like them. Many times my ribs turn out too tough...these were perfection. Thank you for a great simple recipe!
