Healthier Soft Oatmeal Cookies

I loved the idea of a healthier oatmeal cookie recipe, so went ahead and made a little adjustments to this recipe hoping my family would like it. These are my changes: substituted butter with coconut oil, used 1 1/3 c brown sugar in place of both sugars, doubled the vanilla extract, reduced the all-purpose flour to 1/2 c, reduced the salt to 1/2 tsp, omitted the cinnamon and dates, and added 1 c chopped pecans and 1/2 c raisins. The rest of the ingredients (eggs, baking soda & whole wheat flour) were kept the same as the original recipe. My family loved these!! :) I try to always have these already rolled into balls in the freezer, so I can just take them out of the freezer to room temp while the oven gets to 375F and bake them for 12 minutes, this way they are done but still a bit chewy and just delicious. Vanilla Glaze

Very good recipe! Just made a few changes based on previous reviews: milk and butter were tbs instead of tsp, the rest were exactly as written. It had a nice buttery flavor, and complimented very well a confetti cake made to look like a "rosca de reyes" for kindergarteners. If you want a simpler flavor, I would keep the butter in tsp, but the milk definitely needs to be in tbs always.

Chocolate Chip Mini Muffins

I liked this muffins, but more importantly, the kids loved them! I think this is a great recipe if you are trying to give your family better options nutrition-wise. I used 1 cup white flour and 1 cup whole flour, coconut oil and coconut milk for the regulars keeping the same amounts as the recipe indicates, and used only brown sugar (1/2 cup in total). Also, added 2 tablespoons of cocoa as suggested. Thanks for the recipe!

Chewy Chocolate Chip Oatmeal Cookies

I was looking for a kind of healthy cookie and these turned out to be a great option! I made a few changes: substitute coconut oil for the butter, used only brown sugar (1 1/3 c), a little more flour (1.5 c), doubled the baking soda (1 tsp) and reduced the salt (1/4 tsp). I used natural rolled oats (not the quick cooking ones) and liked them a lot! On the first batch I forgot the chocolate chips and we really liked them, so maybe sometimes I will leave those out on purpose. Oh, and half of the recipe made 16 cookies, Thanks for the recipe!

Unbelievable Chicken

This is a very good recipe. I marinated chicken thighs overnight and cooked them on a pan over the stove. It was a good alternative to my usual seasoning, and will make this again from time to time, thanks!

Easiest, Most Delicious Meringue Buttercream

I used only 2 cups butter and found it to be enough buttery flavor, also added a pinch of salt. It was not too difficult to make using an electric hand blender with the whisk attachment(for the egg whites and sugar mixing), and a stand mixer for the rest. Overall it takes some time to make, around 30-40 min., and it was good but not great for my taste. I think I prefer a simple meringue (egg whites, sugar and water) over this. I am not sure if I will make this again.

Fluffy White Frosting

This is a great frosting, exactly what comes to mind when I think of a cake from my childhood :) It turned out to be pretty easy (using a stand mixer), and looked beautiful on chocolate cupcakes. I added 1/4 tsp almond extract to the recipe; maybe next time I will substitute fresh (1) lemon juice for the vanilla extract -goes great with a white cake-, just like my mom used to, thanks!

Red Velvet Cupcakes

These cupcakes had a nice flavor and texture, especially since they are made from scratch... nothing extraordinary though. I think some adjustments have to be made if you really want RED cupcakes, these were kind of a redish-brown.

Banana Crumb Muffins

These are very good !!! I used 1/3 c. oil instead of butter, and added chopped pecans to half the batter, but these are not absolutely necessary, the regular ones were as good. I got 14 muffins total. Thank you !!

Satiny Chocolate Glaze

I followed the reviews and made this in the microwave (added the vanilla last), used this on a "fudge marble" bundt cake and came out delicious! I made the whole cake the night before, let it cool completely and refrigerated overnight. Then I let it sit at room temp for about 2 hours so the glaze wouldn't be so hard. Thanks for the recipe!

Whipped Cream Cream Cheese Frosting

I think this is a very good frosting, maybe just not that firm for piping purposes, though. I only substituted confectioner's sugar (1 3/4 c), used it on a chocolate bundt cake and garnished with fresh strawberries. I cut the cake in half and put some frosting and strawberries in the middle, and did the same on top. Everyone liked it, mostly because it was not excessively sweet, thanks for the recipe !

These are great! I was careful NOT to over mix the batter, and also substituted the white sugar in the topping with brown sugar. I had some topping left, so next time I will make half of it or double the batter. Thanks for a delicious and easy recipe!

Basic Cream Cheese Frosting

I reduced the amoount of sugar but I am not sure whether I used 2 or 3 cups. This is a good frosting, I used it on a chocolate cake and it was good, maybe a little too buttery for my taste, but overall it was a nice frosting. Thank you!

Cream Cheese Frosting II

I decided to double the amount of sugar and vanilla, and turned out a little too sweet for a carrot cake, so next time I will make the recipe as is, I am sure it will be perfect! Using only half of the recipe was the exact amount for a 9" double layer cake. Thank you! UPDATE: I followed the recipe exactly and turned out excelent! Half of the recipe made enough for 24 mini cupcakes and 8 regular cupcakes, with very little left over, thanks!
