Tapenade

The real thing. However, it is greatly improved if you double the garlic, and use half Kalamata and half Nicoise (or picholine) olives. Excellent!

Easy Focaccia

Reviewed: Feb. 14, 2001
One thing: you can use a glass or metal bowl to mix this bread, doesn't really have to be stoneware. This is a good, basic focaccia.

Heavenly Potatoes and Ham

Reviewed: Feb. 12, 2001
Spectacular! I made this for a dinner party and it was a smashing success. I did, however, reduce the amount of potatoes to 4 pounds, used Yukon Gold potatoes, and added an extra can of soup, and 1 1/2 teaspoons each of dry mustard and garlic powder. I definitely will make this again!

Cooky Cookies

Reviewed: Jan. 26, 2001
This is the cookie my mom used to call "Ranger Cookies" (also sometimes called Cowboy Cookies) -- she got the recipe from the LA Unified School District. This dough makes a great chocolate chip cookie -- just add 3 or 4 cups chips to this recipe.

Cheezy Chicken Spaghetti Bake

Reviewed: Jan. 21, 2001
Excellent -- one of my fave AR recipes, BUT two things: the transfer from AR's old format left out that one of the Cheez Whiz jars should be "Salsa" or "Mexican" flavor. Plus, if you use just 8 oz. of spaghetti you'll end up with tons of sauce, so I use either 12 oz. or even 16 oz. I also add 1 tsp. garlic powder - makes it even tastier!

Brown Sugar Cake

Reviewed: Jan. 15, 2001
This is a terrible cake. I am a pastry chef and followed the recipe as written, plus my oven is well-calibrated. What I ended up with was a dry, hard product that was a complete waste. Needs at least 1 cup sour cream, another egg and 1/2 cup butter. Beware!

Old Fashioned Peanut Butter Cookies

Reviewed: Jan. 15, 2001
This is an excellent cookie...after you add a bit more salt (peanut butter cookies need salt) and add another cup of peanut butter chips.

Cincinnati Chili I

Reviewed: Dec. 27, 2000
Excellent! I've never had chili in Cincinnati (only heard about it from my husband), but this is a great recipe. Very unusual and delicious, and wonderful on spaghetti with cheese and onions.

Garlic Chicken

Reviewed: Aug. 18, 2000
Excellent method, but do double the amount of garlic AND crumbs/Parmesan. The result is also better if you use a really good, fruity extra virgin olive oil with the garlic. Also, a few grinds of fresh pepper really lifts the dish. Great cold, too.
