Devil's Food Sheet Cake

WOW! I just delved into making cake from scratch. I have now made this recipe two times and don't plan on trying a different chocolate/Devil's Food cake recipe anytime soon! I only make the cake part, not the frosting, and bake it like a regular cake, not a sheet cake. I have also made cake balls with my little machine, and they are little bites of heaven! This is SOO moist and delicious, even after freezing and reheating. If you are looking for a chocolate cake recipe, this is it! Follow the recipe exactly and it will be wonderful! On a side note, I haven't attempted to make my own frosting yet, so I have been putting fluffy white canned frosting on this - delicious!

Salmon Croquettes

These were great! I tried to stay really close to the recipe, but did use red pepper instead of celery, added some salt and pepper, and used a mix of wheat germ and bread crumbs for my wheat-germ-aphobic husband! Make sure to drain the salmon really well, as mine were a little watery, but I just squeezed them a lot while forming the balls to get rid of extra moisture. My husband said these were a 5-star after spending all afternoon trying to figure out how to get out of eating them! Very impressed, will make again, but definitely double or triple the recipe - this only made two each for me, my husband, and our daughter. I served with coleslaw and corn on the cob.

BUSH'S® White Chicken Chili

I am giving this only four stars, because, as written, the recipe is a little bland. I made it the first time for my family following the recipe exactly, then when I served it I followed others advice and included tortilla crisps (just did them in the oven). It was really bland until I remembered to grab the salsa, cheese, and sour cream. Despite being a little bland I just made it again yesterday for some friends, but this time I used 1 Tbsp cumin, and a dash of chili powder and cayenne pepper. I also added a clove of garlic to the onion as it cooked. I didn't measure the amount of chicken, I just cooked 1lb of chicken breast. This time we used store bought chips and remembered all the toppings, and with only four adults and an 18mo, my husband and I didn't even get seconds! It was great. My husband says to put it on the "regular" list. Also, just a word of caution, there is no way my large pan could hold everything they say, so I started in the pan, but then later transferred the chili to a larger pot and then used the same pan to cook the chicken. Happy cooking!

Baked Rigatoni with Italian Sausage and Fennel

WOW!! This was so wonderful! I used hot Italian turkey sausage, an Italian blend of shredded cheese, 1/8 of a HUGE onion instead of half, and didn't have any roasted red pepper, but it still turned out so great! I bought some fennel from the farmer's market and was trying to find a recipe to use it in that my husband would still eat - and he did, second helpings and leftovers! After reading the other reviews, I made sure to slice the fennel as thinly as I could, and it was still a little crunchy, but it didn't detract from the meal at all. I have tried a lot of recipes from this site, but this is the first that turned out like it was supposed to on my first try! The flavor was just wonderful, presentation was beautiful, not too dry, and what flavor! My 18 month old liked it, too!

Easy Polenta with Tomato Sauce

This was a very easy recipe - I followed it exactly, and it turned out really well! I am new to polenta (I had only used it to make some little pancake things for my daughter), so I wanted to try something easy with it that would be familiar enough for my slightly picky husband to like :o) This seemed to fit the bill, and I really liked it. My husband was so-so as well as my daughter, but I am craving it again! My polenta did turn out really creamy, like some other people said, not very solid. We just mixed everything together and ate "polenta spaghetti sauce soup". The next day, though, I ate leftovers, and the time in the fridge had firmed the remaining polenta a little more. It tasted great that way, too. I would suggest anyone to try it!

Zucchini Alfredo

This recipe was great! I loved using the cream cheese for the sauce, didn't realize you could do that until I made this! I added a little (too much!) red pepper at the suggestion of one of the reviewers. That really bumped up the flavor, I just won't use as much next time! You really couldn't taste the zucchini, but a great way to mix a veggie into dinner! Thanks!

Pineapple Chicken Tenders

I followed this recipe exactly (may not have made a whole 2lb chicken, though, only three of us), and it turned out great. I put chunks of red and green peppers as well as pineapple on the skewers to add some veggies. I thickened the sauce with a little cornstarch and used it to dip the chicken, or to mix in with the rice I made to accompany. Serving with the rice and veggies made a good meal. My husband definitely wants it again!
