The Best Ugly Turkey

The turkey was beautiful! I'm not sure why people say it looks ugly. It was very moist and flavorful. We did a few things might have helped keep it pretty: 1) We cooked for about 2.5 hrs before flipping 2) Turning was a two person process - one person used the handles of big spoons (inserted into both cavities sort of like a rotisserie) to hold the bird up and the other person flipped it.

Cheese and Prosciutto Focaccia

This was EXCELLENT! My kids (7 years and under) loved it too. Very easy to make. Very different than what we usually make. Very strong italian flavors. It is very hard to roll the dough out unless it is at room temperature, so put the dough on the counter before hand.

Eggplant Parmesan For the Slow Cooker

Pretty good. Way to difficult to fry the eggplant. It would be alot better to bake them. See Eggplant Parmasean II on All Recipes to see how to bake them. They are mush anyway after they are in the crock pot (not crisp at all), so no reason to fry. Used 2 large eggplants, 1.5 bottles of spaghetti sauce, and cooked it on Hi for 2 hours.

Mashed Sweet Potatoes

4.5 stars. I peeled and cut up 3 potatoes. Boiled them and mashed them. Mixed in 1/2 cup milk, 6 TBS butter, 1 TBS brown sugar, and 1 TBS of honey. Excellent. The sweetness was perfect (would not add any more sugar or honey). Made 3 meals-worth for our family (2 adults, 4 kids).

Rainbow Pasta Salad I

Coco-Scotcheroo Cookies

Excellent! Did 1/2 cup of margarine instead of adding the shorting. I decreased the white sugar to 1/4 cup. It think it is still too sweet. Next time I will decrease on the sugar again.

Honey BBQ-Marinated Chicken Drumsticks

We liked it. Didn't use the peppercorns or chili sauce (did't have them and the kids don't like spice). Baked at 375. Baked for 20 minutes and turned them. Baked another 20 minutes. I wasn't sure whether they were done, so I added another 10 minutes. They were good but the drumsticks I got were very grizzley. Next time, I'll buy a better brand of drumsticks.

Spinach Whole Wheat Quesadillas

This was great! I modified it a little bit. I used frozen spinach. I cooked the spinach in the microwave and then added the chili powder and garlic powder to the spinach. I did decrease the garlic powder to 1/4 tsp. I didn't add the green onion. I followed the rest of the procedure in the frying pan. I served it with sour cream. It would have been great with salsa but I didn't have any salsa in the house.

Easy OREO Truffles

Very rich. I used fat free cream cheese. I put the cream cheese/ oreo crumbs mixture in the freezer for about 30-40 minutes to harden it up. Then, it was really easy to make the mixture into the balls. When I dipped the balls into the chocolate the outer chocolate hardened VERY quickly even while I was finishing the rest of the balls. I wish I didn't crush the 9 cookies in the beginning. I didn't use them. I wish I had the whole oreos to eat. I actually used mint oreos for Christmas.

Slow Cooker Sweet Chicken Chili

Easy to make. Very easy to shred the chicken, but there was too much chicken and I only used 5 breasts. I didn't think it was sweet. There was hardly any liquid in the "chili." We had it on torillas. It wasn't spicy enough for us even with my modifications. I followed alot of ideas from other reviewers. I drained and rinsed the beans. I added 2 cans of diced tomatoes (UNdrained). I also added 2 T chili powder, 2 cloves of garlic minced. Next time I would use 3 T of garlic powder and add green chilies.

Special Turkey Gravy

I'm rating my modification as 5 stars. This is what I did. Instead of turkey stock I used 2 cans of vegetable broth (~15 oz). We didn't use any water, salt, pepper, or celery salt.

Sea Bass with Honeyed Apples

Great! Do not waste the bread crumbs, it calls for way too much. I poured 2 cups of bread crumbs in the dish and breaded 6 fillets. I less than 1/2 of the bread crumbs.
